Bread Baker’s Apprentice Challenge – Casatiello

Okay first, this bread is the best bread ever. Ever.

This is the 5th bread of the BBA challenge and it’s a brioche-type bread but has salami and cheese (I used cheddar) mixed into the dough.

It took me, I don’t know, 3 weeks to start on this bread. I think it was the movie Grease that said one of the characters smelled like salami and that kind of traumatized me. I’ve never tried it because I didn’t want to smell like it. So that was set back number 1. Then once I decided I was going to use it, I couldn’t find it! Anywhere! Then I found a package, ate half of it, and decided to put the bread off even longer just for the hell of it.

This was a quick bread compared to the other BBA breads, it only took about 5 hours to complete. It was easy to put together and as I said, best bread ever. My only complaint is the shredded cheese kind of just disappeared. Next time I will do chunks instead so you’ll get obvious pockets of cheesy goodness.

As always, if you want this recipe check out the book.
