Meatballs

I’ve been trying to get back in the routine of cooking things other than cupcakes and bread. It’s tough, not going to lie. Last week I went to the store with cupcakes, cheesecake, and salad on my list. About halfway through my shopping I thought about some meatballs my mom had made recently and how much my husband liked them. My mom had told me that they were a Paula Deen recipe but I couldn’t find the exact recipe online – I’m pretty sure she pulled it out of Paula’s magazine. This recipe was pretty close although the ones my mom made had diced onion and I just completely forgot to add it. They are very good and the combination of beef and pork make them so much better than regular meatballs.
I do recommend that you forget about taking pictures of these though because this is very likely to happen:

- 1 pound ground beef
- 1 pound ground pork
- 2 tablespoons fresh parmesan cheese, grated
- 1 to 1½ cups Italian style Panko bread crumbs
- 3 large eggs
- 1 teaspoon salt
- ½ teaspoon freshly ground pepper
- 2 cloves garlic, finely minced
- 1 tablespoon fresh basil, finely chopped
- ¼ cup fresh parsley, chopped
- ½ teaspoon dried oregano
- Preheat oven to 350. Either use a broiler pan or line a baking sheet with aluminum foil and top with a wire cooling rack.
- In a large mixing bowl combine ground beef, ground pork, parmesan, eggs, salt, pepper, garlic, basil, parsley and dried oregano. Add Panko ½ cup at a time until mixture is not to wet and can be formed into balls easily. Roll into small balls and place on broiler pan or baking sheet. Bake for 30 – 40 minutes or until meat is cooked through. Serve with pasta and sauce of choice.

Yum! Your pictures are fantastic. I want a plate of pasta with meatballs right now! I have never actually mixed beef and pork for meatballs – I have no idea why not! Looks so tasty!
