Coffee Ice Cream

My mom showed my a salted caramel ice cream recipe awhile back that I’ve been dying to make and yesterday was finally the day. Notice that I’m not posting that recipe. sigh I tried to make caramel 5 times. 5 TIMES. I burnt every batch. I’ve made caramel a million times but yesterday just wasn’t my day.
I had ice cream on the brain and a few cups of cold coffee in the coffee pot so I settled on coffee ice cream. It’s actually my favorite kind of ice cream but I always forget about it since I know my husband won’t touch it. This recipe was fantastic! It’s creamy and rich without heavy cream or eggs! It’s absolutely delicious and I’m contemplating having a small cup for breakfast. It’s just like having a cup of coffee, right?

Coffee Ice Cream
2 cups half & half
2/3 cup sugar
2 teaspoons vanilla
2 cups strong coffee
Heat half & half and sugar over low heat until the sugar dissolves. Remove from heat; stir in vanilla and coffee. Chill for at least an hour. Freeze according to your ice cream machine’s instructions.






perfect timing! I just told my boyfriend I am going to make him ice cream and he requested coffee ice cream. I will use this as the base, not I just need to figure out adding in chocolate chips and caramel!
