LB – Banana-Oatmeal Bread

The best thing about being a part of a blogging group is trying things that normally you wouldn’t. Like this bread (err… muffins) which was chosen by Melynda as this week’s Light Bites recipe. I like my quick bread’s light and airy with a good bit of butter so I would have never chosen a muffin whose name itself screams ‘I’m dense and heavy and contain nothing bad for you at all!’
Okay, so I might be exaggerating a little. It does have sugar in it. And vegetable oil. It also calls for all white flour which I thought was weird. It just seems like the kind of recipe that would call for at least half whole wheat.
I did make changes, obviously. I made 12 muffins and 1 mini loaf; baked the muffins for between 20 and 25 minutes (I don’t own a timer, gah!) and the loaf for about 35. I also used applesauce in place of the vegetable oil. That trick worked fine here. You can’t taste the apple and it didn’t do anything weird to the texture.
As I expected, they are very dense but I imagine that means they would keep you full for quite awhile. The flavor is great, of course. Banana and oatmeal always work well together. Add cinnamon to the party and well, it doesn’t get much better than that.
I’m posting the original recipe below since Melynda just welcomed baby #3 into her family and is probably too busy for silly things like blogging! Congrats again Melynda!

- Preheat oven to 350°.
- Combine first 4 ingredients in a large bowl; beat well at medium speed of a mixer. Combine banana, oats, and milk; add to sugar mixture, beating well. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, salt, and cinnamon; stir with a whisk. Add to sugar mixture; beat just until moist. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.





Oh I have 5 very ripe bananas right now!! This sounds like a great use for them.

What a great way to make banana bread healthier. That way I can enjoy more than one piece of it.

I like the addition of the oats in this recipe. I think I’m going to try adding them to my regular banana bread recipe (at least there will then be 2 healthy ingredients in it) ;)
