This week’s French Fridays with Dorie recipe is Vanilla Eclairs. I was pretty excited about this one because I’ve worked with pate a choux once before and loved both working with the dough and the outcome.

The recipe is very simple and I had it mixed up and piped onto the baking sheet before my oven had even preheated! I took the easy way out and filled them with whipped cream because the last thing I need is extra pastry cream hanging around the house. I did use Dorie’s suggestion of a glaze though.

(Can we talk about how yellow my eclairs are? I got some fresh, local eggs from my mom recently and I was blown away by how different they were from grocery store eggs. In appearance and taste! I hated “wasting” them in a baked good but was curious to see how they would do in something where eggs are so important. LOVED them.)
