FFwD: Tourteau de Chevre

Happy Friday! Who’s ready for the weekend? I know I am!
This week’s French Fridays with Dorie post is about the Tourteau de Chevre, which is basically a cheesecake made with goat cheese instead of cream cheese. I chose to make mine as bars because I can justify eating a bunch of squares of cheesecake better than I can justify eating a bunch of large slices of cheesecake. *shrugs* They worked perfectly as bars, didn’t have to adjust the recipe at all.
I have to tell you that on the day I made this, I wasn’t thrilled with it. It was extremely dry and tasted just like any other cheesecake. But by the next day… oh the next day… it was like a different dish completely. It wasn’t dry anymore. You could taste a slight tang from the goat cheese. It was delicious!

Bars are a great idea! And I am sure there are less calories in a bar than there would be in a slice ;-)
I had let mine sit overnight before I cut into it & kept wondering why my crumb wasn’t as dry as I thought it would be. You just solved a mystery for me! If I make it again, I will remember to do that on purpose…. THANK YOU!

Great idea to make bars – looks really good! I didn’t make it yet & am planning on doing it today. What size pan did you use – and any changes in baking time/temp/etc ? TIA :)
I used an 8×8 – I didn’t make an adjustments and thought it was great. The crust was a little thick for bars but the crust is my favorite part so I didn’t mind. :) I baked it at the temp the book said but probably pulled it out a few minutes early.

Love that you chose to make the tourteau de chevre as bars. Would have been much easier for all the people I passed mine around to. Gorgeous pictures too! Love your berry reduction!
