Secret Recipe Club – Slow Cooked Oatmeal

Last month I found this fun new blogging club to join: Secret Recipe Club. Each month our lovely organizer, Amanda of Amanda’s Cookin’ sends us a top secret email with the name of a blog and then it’s our job to go through that blog and pick a recipe that we want to recreate. I’m pretty excited to be participating this month and I hope to continue on with the group!
This month, my top secret email told me to head over to Never Enough Thyme and I knew immediately that it was a perfect match. She’s a southern girl like me and her recipes really reflect that. I set my heart on making Lana’s boiled peanuts but I never found any raw peanuts! Anyone know where to get them?! So I went with my second choice: slow cooked oatmeal.
I’ve had a bag of steel cut oats in my pantry for who knows how long. I won them (along with about 20 tons of other oat products) in a photography contest awhile back and just never got around to opening them since they take so long to cook on the stove. This was the perfect solution.
I have a weird relationship with my crockpot – I like to be able to check on it throughout the day, which kind of defeats the purpose of the crockpot, right? But anyway, I worried that the oats would run out of water and start burning or there would be too much water, etc, etc, etc. but everything worked out perfectly!
One warning: the raisins kind of melt into the oatmeal during cooking and creates and very strong raisin syrup. If you aren’t that into raisins, you might want to hold off adding them until after the oats are cooked.

Instructions
- Spray the inside of the crockpot with the cooking spray. Add all ingredients and stir. Turn on the crockpot to its lowest setting. Cover and leave it overnight.
- The next morning, give it a quick stir and then top with whatever you want. Cream, maple syrup, brown sugar, nuts, dried fruit, and granola are all great ideas!





Now I know what to do with the steel cut oats! The first time, I tried to cook them like regular oatmeal. That didn’t work out so well…
I’m going to try this tomorrow.
I got mine at the Farmer’s Market, but I have seen green peanuts in most of the grocery stores here. Of course, if you’re not in the south, it might be harder! The Oatmeal looks good and the group looks fun – I might have to join in! :)
I just think this is such a fun group! I have never heard of it but it looks like fun! Your oatmeal looks great – I open my crock pot all day too! :O
It sounds like such a fun group! I love that you’re all potentially getting to see someone’s blog you’ve maybe never seen before and are all going to be making something completely different! I might have to consider joining sometime. It definitely has more of a chance than pinterest ;) lol
Oh and I’m the same way w/my crockpot! I’ve so far only used it when I’m home which is most of the time anyway but I love to check on it throughout the cooking time.
Steel cut outs in the slow cooker is an amazing idea.
I’ve got to give this a whirl. I’ve never cooked with steel-cut oats before. I know they require different treatment.
Isn’t the Secret Recipe Club fun?!? Amanda’s such a doll for thinking it up and organizing the whole thing for us every month.

I must do this. I keep meaning to make steel cut oats in my slow cooker and I never do. Something about leaving the crock pot on overnight bothers me yet I will leave it alone during the day while I am out and about!! ; ) Perhaps over this weekend…what a wonderful thing to wake up to and with how cold and rainy it’s been depsite the calendar saying it’s June, it’d be a perfectly warm and filling breakfast!!
That looks really good…I am always trying to inspire myself to have more steel cut oats…I hear they are so amazing for you. But I’m often so lazy with the quick cooking stuff (or old fashioned!). Thanks for the inspiration!
I love slow cooked oats and we’ve had pretty good success in our crockpot too!!
I just signed up for the club, I hope I ‘get in.’ :) Also, Im a little concerned that you didn’t top off your oats with a muffin, or just pile and entire ice cream sundae on top.

I can never find raw peanuts either, be it shelled or unshelled. But I am kinda glad you didn’t because this recipe looks SO good. I really need to make this for my kids.
I love the SRC and its fun to go through everyone’s take on their assignment, plus a great way to find new blogs. Love your take on the assignment. I have been able to find peanuts in Asian grocery stores- which reminds me- the next time I visit one I have to buy some peanuts!
I love this idea! I eat oatmeal almost every morning, and this sounds like it would be a delicious and easy variation from my standard oats with cinnamon.
I’ll have to try the overnight version. I’m often too impatient or lazy to make them in the morning.

I just tried this recipe this morning. I was very disappointed that the oatmeal tasted like the cooking spray. Admittedly, I had reservations when I read that ingredient, but wanted to try the recipe as is since I have never made these before. I would highly recommend leaving that part out. The oatmeal tastes like Pam cooking spray and it is horrible. I could have just thrown money in the trash and been much more satisfied with the result.
I have been cooking old fashioned oats in our slow cooker for years . The amount I make might be a bit more than most would like but is ideal for me [ 190 lb. guy ] . In a 1/2 cup of oatmeal I have a 1/6th of it coarse corn meal — gives a bit different consistency — mixed in 2 cups of water . I have our cooker on a timer set to cook for 2 1/4 hours As I personally love my oatmeal cold the cooker turns off about an hour prior to me getting up. I just dish it into my bowl and add raisins , or blueberries–frozen in the winter- raw whole almonds, and several scoops of yogurt . No need for milk or sugar of any type . On gym mornings my wife has half of it and microwaves as doesn’t care for it cold. As the pot cools off prior to me rising the oatmeal doesn’t stick to the pot and absolutely no need for Pam !
