S’mores Treat

July 16, 2011 in snack

My oldest is obsessed with s’mores right now. Between cartoons and commercials and grocery story displays, I literally get asked to make s’mores at least once a day. We did it once, out on the grill, but I have to say it was exhausting. I wasn’t even the one doing the marshmallow melting but the worrying about burned mouths and melted chocolate on clothing was enough to do me in!

I was pretty thrilled to find this recipe which is made in the oven and uses Golden Grahams (yes, the cereal!). They were seriously delicious and my kids were thrilled when they realized what I was making.

If I had another box of Golden Grahams (which is my favorite cereal ever, in case you were wondering) I would be making another batch of these right now!

Ingredients
  • 4 1/2 cups Golden Grahams cereal
  • 1/4 cup light corn syrup
  • 2 tablespoons butter
  • 1 cup milk chocolate chips
  • 1/2 teaspoon vanilla
  • 2 cups mini marshmallows
Instructions
  1. Spray a 9 x 13 inch baking pan with oil.
  2. Pour cereal in a large bowl and set aside while you melt the chocolate.
  3. In a medium saucepan over medium heat, combine corn syrup, butter and milk chocolate chips. Stir constantly until chocolate chips are melted and ingredients are combined.
  4. Remove from heat and stir in vanilla. Pour over cereal and stir quickly until cereal is coated with chocolate. Stir in the marshmallows.
  5. Pour mixture onto cookie sheet and using a slightly damp hand, press into the pan. Let cool before serving.
