Secret Recipe Club – Cheddar Jalapeno Beer Muffins

It’s time for another Secret Recipe Club post!
This month I was assigned Join Us, Pull Up a Chair which is a great blog written by Heather. She is a much more adventurous cook than I am so I had so much fun going through her archives and found quite a few recipes that tempted me. I finally settled on her Jalapeno Cheddar Beer Bread.
I turned the bread into muffins just because I prefer the portability of muffins over a bread. They had great flavor with just the right amount of spice. And the oozy cheese on top? The best part, of course! These muffins are pretty dense so I think they’d be beyond amazing with maybe half cornmeal/half flour. The beer wasn’t super noticeable but I did like that it gave the batter a nice spring.

Ingredients
Instructions
- Preheat oven to 375 degrees. Grease a muffin pan or line with paper liners. In a large bowl, combine flour, baking powder, sugar and salt. Add the chopped jalapenos and cheddar cheese. Pour in the beer into the mixing bowl and mix until blended.
- Pour mixture into prepared muffin cups. Bake for 22-25 minutes or until golden brown. Serve hot with lots of butter!

I’ve made jalapeno cheddar bread, but adding beer??? A stroke of genious! And I adore the idea of making bread into muffins!

I’m so glad you like the recipe! It’s one of my favorites to make. I’m definitely going to be making them into muffins next time – especially since I have about 2 dozen jalapenos to use up!

I’ve made beer bread before, however, I like the idea of putting it in muffin tins. Bite sized. They look terrific!

Yum! Looks great — I’m loving SRC, so many great new recipes to try! These would be great with chili this fall and winter.

These were awesome beyond awesome. I don’t normally like muffins, but I had to force myself to stop eating these and bring the rest to work. My coworkers couldn’t stop eating them. I don’t know how many calories they have, but they are damn good.
What kind of beer did you use?
I’m almost positive I used Natural Light or something equally cheap. It didn’t have a huge effect on the flavor. Thanks for reading and commenting! :)
