Pumpkin Cinnamon Chip Bread

I’ve made a lot of pumpkin bread in my life my 5 years of cooking and this one right here is by far the best. Why you ask. Because it was absolutely exploding with cinnamon chips. Ex. Plod. Ing.

Oh yes.
The cake itself was ridiculously moist and pumpkin-y but the cinnamon chips stole the show. Y’all, don’t expect to see anymore pumpkin bread recipes on this blog – this is the only one I will ever make!
(You guys know I’m lying. I can’t help trying more! But this one is superb. Beyond superb.)
I made mini loaves but the recipe makes enough batter for one big one if you would rather do that. Can’t find cinnamon chips? Hershey’s has a locator!

Ingredients
Instructions
- Preheat the oven to 350F. Lightly grease 2 mini loaf pans or 1 regular size loaf pan.
- In a large bowl, beat together the oil, sugar, eggs, pumpkin and vanilla.
- Add the flour, baking powder, baking soda, salt, and cinnamon; stirring to combine. Fold in the cinnamon chips.
- Spoon the batter into the prepared pans.
- Bake mini loaves for about 30-35 minutes and large loaves for 60-70 minutes. Test with a toothpick in the center of the bread to make sure it’s fully baked. Remove the bread from the oven, and cool it on a rack.





I have yet to try anything with cinnamon chips in it, but this might have just convinced me to pick up a bag this weekend while at Target!
I actually have a bag of cinnamon chips hanging around in my pantry, and I’ve been wondering why I ever bought them. I have discovered the answer and I thank you. Ex. Plod. Ing is right! :)

I just started using cinnamon chips this fall and I love them! I bet they’re great in pumpkin bread!
I bought cinnamon chips while vacationing in the U.S. this summer (we don’t have them in Canada – or at least not where I live) but then I couldn’t, for the life of me, remember what recipe I wanted to use them for. Now I can finally use them! Can’t wait to try this out – and find out what these cinnamon chips taste like. : )

This sounds amazing. Sadly, according to the locator, there are no cinnamon chips within 20 miles of me. It’s not like I live in the middle of nowhere, either. Lame.

Ooooh. You had my curiosity at ‘cinnamon chip’. I’ve got to snag me some of those.
I’m waiting for my grocery store to put some cinnamon chips on the shelf and I’m stocking up! Last year, the first year they’ve ever been in my city, I snagged two bags and the next week they were sold out and never stocked more! This bread looks glorious and I love the exploding cinnamon chips!!

Thanks for posting this – my 4 year old spotted the bag of chips in the pantry and I found my way here via google. We had an easy time making it together and it’s not done baking but it smells divine!!
This is a wonderful bread. I made one pan at it took closer to 90 minutes to cook all the way through. Also, I added more cinnamon because I thought it could handle more. But a fantastic and easy bread to make.
Sound delicious! I have cinnamon chips and will make it this weekend. When you say a regular loaf pan, do you mean 9×5 or 8×4?
I’m sure it would fit best in an 8×4 but would be fine – just a little short – in the 9×5. I haven’t tested it in a big pan though, so I can’t be 100%. :)
