Project Pastry Queen – Pumpkin Tart with Streusel Topping

This week’s Project Pastry Queen recipe was chosen by Tara and she chose the Bourbon Pumpkin Tart with Streusel Topping. Mmm, right up my alley!
I know this is going to shock you but I loved these (I made mini ones, obviously). They were like pumpkin pie but better because tart dough > pie dough.
I left the bourbon out. Mostly because last time I walked into our liquor store, the 2 guys behind the counter yelled “Roll Tide!” and I took it as a sign that I have been hanging out there too much. In my defense though, you can’t even buy wine in this state without going to a darn liquor store.
No changes other than that. It’s pretty perfect as is.
These would be delicious on a Thanksgiving table. A big tart with lots and lots of whipped cream? I’ll take it.

Aww, they’re so cute and I can imagine how yummy they are. I love that you made ‘em into minis because I like individual servings of things. It makes it seem less overwhelming than one ginormous pie tart and these would totally fly in my house. Give the fam small bites like these and they’re gone in no time. Give them a whole pie/cake/whatever, it freakin’ sits there!

Somewhere between 25-30 minutes. I just watched them pretty closely until the crusts were golden because I’d never made tarts so tiny! Thanks for reading and commenting! :)

I’m all about the minis so I’m totally on board with these little guys. Our state is the same way – no wine, beer, etc anywhere but liquor stores. I’m always so jealous when people talk about getting theirs at the grocery store!
