I skipped this post last week since it was Christmas but I’m back, no worries! ;)

We’ve had a fun couple weeks filled with

Snow!

Candy! (I bought this Rice Krispie house for the kids to do and I asked the husband to just build the house. Next thing I know he’s put up barricades in the kitchen so no one could get in and mess up “his house”.)

If we’re being honest here (and we are, right?!) once the Christmas festivities had ended, the fact that we have a deployment approaching very quickly hit me like a ton of bricks and I’ve had trouble pulling myself out of a funk. I’ve worried myself right into a nasty cold.
As far as New Years, we had a pretty low-key one. Colorado is super dry so fireworks (including sparklers!) are illegal in our city which put a damper on my plans of capturing more photos like this one I took last year:

Instead, I rang in the new year with an America’s Next Top Model marathon and a massive round of brie covered in butter, brown sugar, pecans, and dried fruit. Not a bad way to do it, if you ask me.
I don’t really get into the whole resolutions thing but it is a goal of mine to read 50 books this year. You can see what I’m reading on Goodreads. I’ll also be doing a couple photo challenges which I’ll share with you.

I baked my booty off the day before Christmas and had a great time doing it. I ended up making Chocolate Peanut Butter Cup Cookies, Cream Cheese Spritz Cookies, and another peanut butter cup cookie. All 3 were delicious and I’m pretty sure that Santa was a happy guy when he left our house.

We revisited an old favorite dinner recipe: Taco Pasta and I made calzones for the first time. One night’s meatball sandwiches became the next night’s spaghetti & meatballs. My husband likes to help with the cooking when he’s off work so I’ve tried to keep things really simple.
I made these Maple Bacon Biscuits one morning, using canned biscuits, and it was so good! And if you use the canned biscuits like I did, it comes together in no time.

Cheesy Chicken Broccoli Bake from Cassie Craves - Quick, easy, and topped with Ritz crackers. Obviously a winner.
Pasta with Sausage, Beans, and Mascarpone from A Taste of Home Cooking - I love everything about this recipe. I have a list of recipes that I plan on making once the husband deploys and this is at the top of the list. (Because he doesn’t like beans. Sigh.)
Dr Pepper Chicken Wings from Carrie’s Sweet Life – You guys. Dr Pepper. Chicken wings. There’s nothing else to say.

- Yes, black eyed peas are on the menu today. I’m a bit scared though because my mom usually makes the Hoppin’ John – the one time I tried it was kind of a disaster and we ended up trashing it when my mom delivered hers to us.
- Santa brought an Innotab to my oldest and it is seriously cool. I think I’ve played more games on it than he has.
- I’m pretty excited about what 2012 holds for this little blog. Thank you all for reading and commenting and putting up with my shenanigans. I wish I could send all of you cookies.

Brie sounds better than the string cheese and Wheat and Wheat Thins I snacked on yesterday. Happy New Year! I really need to utilize my GoodReads account this year.

Looks like a fun week! Where in CO are you? I am in Fort Collins. Based on deployment I will guess CO Springs. Glad you got to enjoy some great time together before he leaves!
Yup, we’re in the Springs. We just got here about 8 months ago so we’re still adjusting. :)
Everytime you talk about snow I have to hold back from telling my kids. They’d be SO jealous! I’m okay with you getting it all this year though ;)
