French Fridays with Dorie – Quartre-Quarts

This pound cake is our French Fridays with Dorie recipe this week and it has got to be the best pound cake in the world. In Around My French Table, Dorie mentions that it’s drier than the pound cake we’re used to in the US but I thought it was perfect. I happened to catch some strawberries on sale the day I made the cake and it made the best strawberry shortcake.

My favorite part of the cake is the brown sugar that is sprinkled on top before baking. I hated how it made the cake look on the top – it was just little dots of brown – but it added so much to the pound cake!

The recipe is definitely going to be my go-to when it comes to pound cakes from now on, but I’m definitely doubling the recipe next time around!

    I agree, from Dorie’s description I was actually expecting this cake to be drier than it was. To be honest, I wasn’t all that excited about making it, thinking that it would be a little boring. But my cake wasn’t dry at all, it was delicious! And I bet it would make an amazing strawberry shortcake.

    We served ours with strawberries too! I thought they make a nice combination and the sauce from the macerated berries soaked into the cake nicely.

    I loved the brown sugar on top also, though I thought my cake looked like it had age spots when I put it in the oven and took it out. The strawberries look terrific with this!

    Your favorite recipe so far? NICE! Isn’t that great when something just bowls you over? Looks great. I think if I make this again, I need to add more brown sugar. My tablespoon only made a very light sprinkling.

  31. Your cake looks wonderful! What a great idea to use it as a strawberry shortcake base, yum! I didn’t think this was dry at all either and the little extra sweetness from the brown sugar was great.
