FFwD – Savory Cheese and Chive Bread

One of my biggest baking pet peeves is quick breads that don’t fill up a loaf pan. Kind of like that ^. I mean, what is that? I’m starting to wonder if my loaf pans are abnormally wide or something because the other members of French Fridays with Dorie all have normal sized bread.
I don’t get it.
What I do get is the deliciousness that is was this savory bread that’s loaded with cheese (shredded AND cubed for extra gooeyness) and chives. Are there two things that go together better than cheese and chives? Nope, didn’t think so. I was afraid of adding the 1/2 cup of chopped chives that the recipe called for so I used about half that and ended up wishing I’d gone for the full 1/2 cup.
The bread is tender and soft but the outside gets a little crustier than a regular quick bread thanks to all the bubbly cheese. It’s perfection in a (tiny) loaf and becomes even better when it’s toasted and slathered in butter.

OK, I think this bread just convinced me to finally buy FFwD! That bread – despite it’s petite height – looks deadly. I would have to make that when company was coming because I wouldn’t want to be left alone in the room with it. I’d eat the whole loaf. :)

I actually busted out the measuring tape and measured my loaf pan – it was stamped as a 1lb loaf pan, but when I measured it, it was actually the same size as a 1.5lb pan. It’s no wonder people kept telling me one of my bread recipes kept overflowing their pans…
Quickbreads never really seem to fill my loaf pans either so if you figure out what’s up then let me know! I’ve never gone the savory quickbread route before but this looks fabulous!
Pans can be wacky that way! You would think some of those companies could afford a good ruler or something… Glad you enjoyed it anyway!
I have several bread pans and the size of each of them is just a little bit different. Whatever the size it really is good, isn’t it?

Even if it doesn’t look how you wanted it sounds delicious and I don’t think it looks as bad as you think! :) It looks nice and dense — is it moist?
It’s not super moist but it’s not dry either. Kind of like how cornbread isn’t moist or dry, you know? I haven’t found a super moist savory bread recipe so let me know if you find one!
Wow this looks amazing. I am totally with you on the half loaves – I just don’t get it at all. I am going to start using mini loaves for quick breads!
I am new to quickbreads so did not even focus on the filling out part…I was rushing to get my try in by the deadline ;) Nana got hers done earlier in the week and she did fill out her pan more than mine did. Your photo is just lovely !!
You and I have exactly the same problem! My loaf pan is a little larger than the standard size, or so I would like to think. Maybe next time we can turn our savory bread into savory biscotti!
I wish I had added more chives than the recipe called for… This was a great FFwD recipe :)
