Well guys, I’ve survived what should be my last week alone. I say should be because last deployment, my husband’s flight was delayed, like, 7 times and he finally got home 2 weeks after the “official” date. So, we’ll se how it goes.

Beer Cheese Dip
1 tablespoons butter
1/4 cup onion, finely diced
1 clove garlic, minced
1 cup beer
12 ounces mild cheddar cheese, cubed
salt and pepper
hot sauce (to taste)
Melt butter over low heat. Add onions and cook, stirring until soft and translucent. Add garlic and cook another minute, until fragrant. Add salt and pepper, beer and cheese; stir until cheese is melted and everything is combined. Whisk in salt, pepper, and hot sauce to taste. (Transfer to a fondue pot to keep warm. If it starts too thicken too much, thin out with chicken broth.)
