Happy Friday! Who’s ready for the weekend? I know I am!

This week’s French Fridays with Dorie post is about the Tourteau de Chevre, which is basically a cheesecake made with goat cheese instead of cream cheese. I chose to make mine as bars because I can justify eating a bunch of squares of cheesecake better than I can justify eating a bunch of large slices of cheesecake. *shrugs* They worked perfectly as bars, didn’t have to adjust the recipe at all.

I have to tell you that on the day I made this, I wasn’t thrilled with it. It was extremely dry and tasted just like any other cheesecake. But by the next day – oh the next day – it was like a different dish completely. It wasn’t dry anymore. You could taste a slight tang from the goat cheese. It was delicious!
