I’m obsessed with fresh corn right now. Is there anything better in summer than fresh sweet corn?

I made the most amazing ice cream yesterday. It was a sweet corn base and then I layered in crumbled homemade cornbread.

The best. I wish I could pass you a scoop because I know cornbread in ice cream sounds crazy. But trust me.

This is my current favorite summer dinner because not only is it really delicious but it’s ready in, like, 10 minutes. And you know I’m not a fan of cooking super involved recipes this time of year!

You just cook the bacon until almost crisp, toss in some fresh sweet corn and green onions, and dinner’s done.

The sweet corn with the salty, smoky bacon is beyond perfection. And then I put a ton of black pepper because why not?

This is everything I want in a summer dinner.

Fresh Corn and Bacon Sauté

4 servings

Ingredients

4 slices Smithfield Hometown Original Bacon, sliced
4 ears fresh sweet corn, kernels removed
2 green onions, thinly sliced
1/4 teaspoon salt
1/2 teaspoon black pepper

Instructions

  1. Heat skillet over medium-high heat. Add bacon and cook until almost crisp. Add sweet corn kernels, green onions, salt, and pepper. Cook for just 1 minute, until corn is tender but still crisp.
