We had parent teacher conferences last month and during one of them my blog came up and we started talking about how I do a lot of paleo stuff and the teacher mentioned that she and her husband are gluten free so when her students bring in homemade treats for her, she typically has to pass them on to other teachers.

And I don’t know if I’ve told you guys but I love all my kids’ teachers this year. I love them.

I packaged these cute little Gluten Free Iced Orange Cookies up in a gift box with some festive snowflake parchment paper to send to school and according to my kid, his teacher was absolutely thrilled with them.

They’re also really easy! They’re not one of those finicky cookies that either spread too much or don’t spread enough. They’re supposed to keep their shape – rounded tops that are perfect for dipping into a sweet orange glaze.

The dough itself also has fresh orange juice and zest in it so it’s super citrus-y and delicious.

And I love all things citrus this time of year.

These are also perfect for holiday parties or cookie exchanges because you know everyone else will be showing up with fudge or decorated sugar cookies so the orange is a fun change.

Gluten Free Iced Orange Cookies

Ingredients

½ cup butter, at room temperature
1 cup sugar
2 eggs
1 tablespoon orange zest
½ cup fresh orange juice
2 ½ cups Bob’s Red Mill Gluten Free 1-to-1 Baking Flour
1 ½ teaspoons baking powder
½ teaspoon salt
For the glaze:
1 ½ cups powdered sugar
3 tablespoons fresh orange juice

Instructions

  1. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with a paddle attachment, beat butter and sugar together until light and fluffy. Add eggs, one at a time, followed by the zest and juice.
  3. In a separate bowl, whisk together Bob’s Red Mill Gluten Free 1-to-1 Baking Flour, baking powder, and salt until no lumps remain. Add the flour mixture to the butter mixture and beat until combined. Refrigerate for 30 minutes.
  4. Roll tablespoonfuls of dough into balls and place on the prepared baking sheets, an inch apart. Bake for 11 - 13 minutes or until set. They should not brown. Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely before glazing.
  5. To make the glaze, whisk together powdered sugar and orange juice. Dip each cookie, top side down, into the glaze and place on a wire rack to set.
