You guys.

Being a single mom with 3 in sports is no joke.

We had 3 games on Saturday. By the time one was over, we were late for the next.

And I was so unprepared that we ended up just getting food at the food trucks outside of each event.

So this week, I’m prepping snacks in advance, starting with these delicious chocolatey peanut butter bites.

Don’t you love when you find your favorite cookie in unexpected places?

Also, how obvious is it that we love the International Delight® OREO® Flavored Coffee Creamer? Can you tell half the bottle is missing?

Boyfriend and I are both using it daily and we never agree on anything when it comes to coffee.

We can’t even agree on temperature. He has to have his hot, I have to have iced.

But we both love this coffee creamer.

It’s seriously like OREO® cookies in your coffee.

Because we’re so busy right now, the slow cooker has been in charge of dinner most nights of the week and I’ve been trying to keep easy snacks on hand so we’re not running into the gas station for bags of chips on the way to practice.

I love the YoCrunch® Lowfat Yogurt Cookies ‘n Cream with OREO® Cookie Pieces for that purpose.

It’s something I feel good about my kids having, something they can get themselves since it’s ready to go, and it keeps them full and energized throughout practice.

No Bake Peanut Butter OREO Bites!

This recipe couldn’t be any easier.

It’s no bake, 5 ingredients, and it really just consists of stirring everything together and then rolling it into balls.

You just stir some oats and chia seeds together and then coat that in a delicious mixture made of peanut butter and International Delight® OREO® Flavored Coffee Creamer. And then you stir in chopped OREO® cookies.

That’s it!

It’s a great snack for when you’re late to yet another soccer practice and just need to grab something quick.

No Bake Peanut Butter OREO Bites
Servings: 16 bites
Ingredients
  • 1/3 cup International Delight® OREO® Creamer
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups old-fashioned oats
  • 2 tbsp chia seeds
  • 6 OREO cookies roughly chopped
Instructions
  1. In a small saucepan, stir International Delight® OREO® Creamer and peanut butter together over very low heat until peanut butter is melted and mixture is smooth.

  2. Add oats and chia seeds to a separate bowl. Pour the peanut butter mixture over the oats and still until everything is coated. If it seems like the bites won't hold together, add more oats 1 tablespoon at a time.

  3. Gently stir in chopped OREO cookies. Roll mixture into 16 bites and refrigerate for at least 2 hours, or until oats have softened.
