Loaded Baked Potato Dip

One of my favorite things to make for parties or just for days I’m hanging out watching football games are dips. Dips are so versatile and it seems like almost everyone likes them. I mean, who doesn’t enjoy dipping a crunchy chip into a deliciously creamy dip?

I came up with this Loaded Baked Potato Dip to go with Kettle Brand Chips, which is one of my all time favorite brand of chips. I survived on their Sea Salt & Vinegar chips during my 2nd pregnancy – I swear I would have starved if it wasn’t for them. But for this dip, I used the Sea Salt which is another favorite of mine. A lot of times plain chips are either too salty or not salty enough for me but these are just right. They are perfect and I could easily eat an entire bag in day. Not that I did that or anything…

Kettle Brand has over 30 flavors of potato chips that you can check out here. You better believe I went searching for the New York Cheddar flavor after I found out about it. That one, by the way, would also go great with this dip.

So about the dip? I was really craving a good loaded baked potato when I made it so it is everything you would typically put into one – sour cream, bacon, cheddar cheese – but without the potato! It is served piping hot so it really does taste just like a loaded baked potato with the Kettle Brand Sea Salt chips. It is absolutely delicious! All the cream cheese and sour cream mixed with the salty bacon and sharp cheddar is just perfection. It is also incredibly easy and fast to whip up if you’re throwing a party or like I said earlier, just hanging out at the house watching some football. The ingredient list is super short and you likely have everything on hand already! If you are a fan of loaded or twice baked potatoes or just a fan of dips, you will definitely love this! Make sure you stock up on Kettle Brand Sea Salt or New York Cheddar chips before you make them.

Loaded Baked Potato Dip

Ingredients

4 ounces cream cheese, softened
1 cup sour cream
2 tablespoons chives
6 slices bacon, cooked and crumbled
1 cup shredded cheddar, divided
2 green onions, chopped

Instructions

  1. Preheat oven to 350F.
  2. Beat together softened cream cheese and sour cream until no lumps remain. Beat in chives, bacon, and half a cup of cheddar. Spoon into a small baking dish. Sprinkle with remaining half cup of cheddar.
  3. Bake for about 20 minutes or until the cheese is melted and the dip is bubbly.
  4. Serve with Kettle Brand Sea Salt chips.

Creamy Caramel Apple Dip

I wanted ice cream so bad the other night. SO BAD. The problem was that I’d already showered so my hair was a hot mess, my eyebrows weren’t done, and I had yoga pants on. I know what you’re thinking: “Why didn’t you just cruise through the Dairy Queen drive-thru, Amanda?!” and I will tell you why.

I am cursed.

No. Seriously.

We live on Fort Carson which  means whenever I leave the post, I have to go through an ID check to get back on. And they do random searches. And I am randomly chosen every time I leave the house looking like a disaster. Can’t even be chosen when I look cute and actually have my hair brushed. And let me tell you, there is nothing more embarrassing than having to stand out in the cold in your husband’s workout shorts while your 12 Target bags (when you only went for diapers of course) are poked through by military police. Cursed, I tell you.

So I have a new rule that I only leave post when I have my hair at least straightened.

Back to the original problem: I needed ice cream in my life but I couldn’t leave.

I had all the ingredients for this dip and while it wasn’t ice cream, it was cool and creamy and the little crunchy toffee bits mixed in made it almost feel like a B&Js flavor. My kids dug it and even though it’s not healthy at all, both kids ate their weight in apples over the next few days.

Creamy Caramel Apple Dip

Ingredients

1 (8-ounce) package cream cheese, softened
1/2 cup brown sugar
1/4 cup powdered sugar
1 teaspoon vanilla
1/2 cup Heath Bits 'O Brickle Toffee

Instructions

  1. In the bowl of a mixer fitted with a paddle attachment, beat together cream cheese, brown sugar, and powdered sugar until combined. Beat in vanilla. Remove from mixer; use a rubber spatula to fold in the toffee bits.
  2. Serve with apple slices.

Buffalo Chicken Dip

So I chose a side.

I’m officially rooting for the Giants. Mostly because of my husband’s man-crush on Tom Brady. I like to aggravate him.

I’m going to watch the game. Mostly because Pam scolded me when I told her I wasn’t.

I’ve got a snack planned even though my husband won’t be here to partake. Mostly because the original post of that snack was lost when one of my plugins went wild a couple months back. And by lost I mean I deleted it when I got tired of transferring recipes. Whoops.

But about this dip?

Buffalo chicken dip is the thing to do these days. Everyone and their mom makes it and blogs about it. At one point, it was our every-weekend football snack. I, of course, got sick of it and haven’t made it in probably 3 years. But oh my gosh, it’s so good! Borderline addictive.

I serve this with pita chips & tortilla chips but pitas are so much better. Also, those little round pita chips? No bueno. It’s worth it to take all 3 of your children to the 4th store of the day to find Stacy’s brand.

Start with 1/2 cup of hot sauce and taste before adding more. I used to add an entire bottle of the stuff but I can’t handle all that these days!

Two years ago: Bacon Mushroom Mac & Cheese

Buffalo Chicken Dip

Ingredients

1 (8-ounce) block cream cheese
1 cup ranch dressing
½ – ¾ cup Frank’s Red Hot sauce
1 boneless, skinless chicken breast, cooked and shredded
1 cup Colby Jack cheese

Instructions

  1. Preheat oven to 350F.
  2. Put cream cheese in a small saucepan over low heat. Stir until melted completely. Stir in ranch dressing, Frank’s Red Hot, and chicken. Transfer to a baking dish.
  3. Bake until bubbly, about 15 minutes. Top with cheese and bake just until cheese is melted, about 10 minutes.

Artichoke Dip

Do you guys do the Black Friday thing? I don’t usually but my mom had to be at the airport pretty early yesterday morning (sadface) so I went ahead to a couple stores and it was insane. I lack any sort of urgency when it comes to those kinds of things so I ended up only buying things that weren’t on sale that I had already planned on buying. I suck at Black Friday.

But now that Black Friday is officially over, it’s time to focus on more important things: the Iron Bowl. Those of you from Alabama know how important it is but for the rest of you, it’s the Alabama vs Auburn game! And even though Auburn is sucking the big one this year, it’s still a huge deal for my husband. So I have another football snack for you today!

This version of artichoke dip is just artichokes – no spinach – so stay away if you aren’t a huge fan of artichokes. I had to make it when the husband was gone earlier this month because I knew he wouldn’t touch anything that is literally just artichokes. It’s so cheesy and delicious though and was absolutely perfect on the pita chips I bought to serve with it. Even my kids ate this one!

Artichoke Dip

Ingredients

1½ cups (packed) grated parmesan cheese, divided
¼ cup plus 2 tablespoons mayonnaise
¼ cup plus 2 tablespoons sour cream
½ teaspoon ground black pepper
½ teaspoon onion salt
½ teaspoon garlic powder
pinch of salt
2 14-ounce can artichoke hearts packed in water, well drained, chopped into ¼-inch pieces
pita chips, crackers, or a baguette (sliced and toasted)

Instructions

  1. Preheat oven to 375F.
  2. Whisk ½ cup grated Parmesan cheese, mayonnaise, sour cream, pepper, onion salt, and garlic powder in medium bowl to blend. Stir in chopped artichoke hearts. Transfer mixture to a 3-quart baking dish.
  3. Sprinkle dip with remaining 1 cup of Parmesan cheese.
  4. Bake until dip is heated through and bubbly, about 25 minutes. Serve with pita chips, crackers, or toasted baguette.

Chili Cheese Dip

One of my husband and mine’s all-time favorite snacks for football games is a dip made by simply spreading softened cream cheese into a baking dish, pouring a can of chili over it, topping with cheddar, and then baking until it’s gooey and bubbly. I know it doesn’t sound like much, but with tortilla chips it is the perfect football snack. So good that last time I made it, we looked at each other and said, “Let’s feed the kids something else so we don’t have to share!”

I was trying to shake things up with I made this recipe but keep the same chili taste. It was exactly what I was hoping for. Kind of like that Rotel dip that I know you love but with a fun twist thanks to all the spices and the lime juice.

I’m putting instructions for the stove top method but I most recently made it in my slow cooker. I just threw all the ingredients (minus the tortilla chips, of course) into the slow cooker for about 2 hours. It was absolute torture having to smell it that long – that’s why I’m telling you to do it on the stove! ;)

Chili Cheese Dip

Ingredients

2 pound box of Velveeta Cheese, cubed
15 oz can chili, no beans
1 cup milk
4 teaspoons chili powder
1 teaspoon paprika
1 tablespoon lime juice
½ teaspoon ground cayenne
½ teaspoon ground cumin
tortilla chips, for serving

Instructions

  1. Combine all ingredients in a med size saucepan. Place over medium heat. Stir frequently until the cheese is melted. Reduce heat, and let simmer for 20 minutes. Serve with tortilla chips.
