You guys. We’re headed to New Orleans today – the boys are going to their first ever New Orleans Mardi Gras and we are SO EXCITED.
We meant to go last year but uhhh… you know, the assault happened and my protective order hearing was the day after Mardi Gras. So yeah, obviously had to cancel. But we’re going this year!
We’re from Mobile originally (the home of Mardi Gras in the US) so the boys have been to Mardi Gras but the celebrations in the 2 cities are so different and I feel like they really need to experience both. And we’re staying with family that we haven’t seen since last summer so it’ll be a good time.

I hope you had a relaxing and/or exciting weekend and hopefully Monday won’t be too bad to you. But just in case, I made us some Blackberry Pineapple Mojitos.
These are really, really easy to make. You just use the handle of a wooden spoon to mash a bunch of blackberries, pineapple, and mint together and then dump in some rum, lime juice, and sparkling water. Throw some ice in and top it with a bunch of mint so it looks fancy. Done.
I hope your weekend was great. The boys and I rode over to Temple for the food truck festival and had an absolute blast. They tried so many things they wouldn’t usually try – I mean, who knew they liked kimchi fries?! And the best part is that I found so many food trucks that I’ll now be stalking on Instagram.
We also saw bluebonnets on the way home! This is the best time of year in Texas (I say this as if I haven’t only lived here 11 months) and I cannot even wait for all the pretty flowers to take over.
And the weather? Amazing! So warm, so spring-like. I’m loving life right now.
Skinny Coconut Mojitos!
These are so delicious, low calories, and so simple! They are just mint and limes muddled together and then a tiny bit of simple syrup, white rum, and coconut water! Serve is over low of ice for the perfect summer drink!
(Because I always gets asked: the cute square ice cubes are from these trays.)
