This summer I’ve teamed up with Bertolli Olive Oil to remix two classic summer recipes. I spun the Bertolli Olive Oil bottle to see what classic summer recipes I got to recreate with my own spin and landed on a pizza and salsa.

As excited as I am for fall, I’m pretty sad to say goodbye to grilling and eating dinner outdoors and all that comes along with that. I had an amazing summer filled with delicious food and I’m not sure I’m ready to say goodbye to my grill just yet.

We’ve almost made it through the week, guys! We’re almost done!

Let’s make tacos and put Pineapple Salsa on them.

Taco Thursday could be a thing, right?

Also, do you want to talk about how I’ve had Taco Bell breakfast TWICE this week? It’s a problem. I won’t even snapchat it (follow me!: amandalivesay) because I’m so ashamed of myself.

Anyway.

I made this carnitas recipe earlier in the week and have been serving it on corn tortillas with a ton of pineapple salsa on top and it is so beyond perfect.

If you’ve never made salsa, it’s so easy you won’t even believe this. You don’t even have to find your blender for this one.

It’s just fresh pineapple, cilantro, red onion, and jalapeno tossed with fresh lime juice and a tiny bit of salt. You can throw it together in just a few minutes. Serve it with tortilla chips, put it on tacos, make burrito bowls, do whatever! It will be delicious with pretty much anything.

Unrelated: who’s your Survivor winner pick? Mine is Cydney. I almost always choose a woman (last season being the exception – I love Fishbach!) and I hope to be Cydney when I grow up.

Okay guys, who’s been watching Once Upon a Time since the beginning?

I think I mentioned that I was obsessed with it and I watched all of season 1 within a day and a half or something ridiculous like that.

But now I’m stuck on season 2. Because Mulan’s there. And I had it in my brain that only classic fairy tale characters were allowed in Once Upon a Time and dangit, Mulan doesn’t belong there!

And Frankenstein. Frankenstein shouldn’t be there either!

What is happening.

Then I went to the IMDB page for the show, and I see what appears to be the Frozen girls? In really bad wigs? Stop, just stop.

Tell me, is it worth continuing? I’m just not into it like I was and it’s kind of depressing because I have the worst time finding new shows to watch.

Speaking of dressing up in bad wigs, Halloween is just over a week away and I cannot be more excited. Mostly because I gave up wine in an attempt to lose the 10 pounds of tacos and wine I’ve put on since July and I’m totally allowing myself some before/during/after trick-or-treating. Because kids. Kids everywhere. Kids ringing the doorbell. Eep.

I’m sure I’ve talked about my love of hashbrowns a million times but today I’m going to talk about it some more. I love fried potatoes in pretty much every form but I’m pretty sure I could happily survive on hashbrowns alone for the rest of my life.

About a month ago I posted a recipe using the diced hashbrowns and it became a family favorite almost instantly.

This past weekend I headed to Walmart for an Ore Ida Hash Browns demo. I hung out with the sweet demo lady for about an hour and got to hear all about the Ore Ida Hash Browns and the Cheesy Potato Casserole that she was making. It’s delicious and super simple!

Cheesy Potato Casserole

Ingredients
  • 1 10.5 oz. condensed cream of chicken soup *
  • 2 Cups Sour cream
  • 1 Teaspoon Salt
  • 1/4 Teaspoon Ground black pepper
  • 2 Cups Shredded cheddar cheese
  • 1/3 Cup Sliced green onions
  • 1 Package 30 oz. Ore-Ida® Shredded Hash Brown Potatoes
  • 2 Cups Crushed corn flake cereal
  • 1/4 Cup Butter melted
Instructions
  1. Preheat oven to 350°F. Coat 13x9 baking dish with nonstick cooking spray.
  2. In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and hash browns until well mixed. Spoon evenly into baking dish.
  3. In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of hash brown mixture.
  4. Bake uncovered for 45 to 50 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Season with additional salt and pepper to taste if desired. Garnish with additional sliced green onion if desired.

After tasting the Cheesy Potato Casserole at the demo, I wanted to make something with the Ore Ida Shredded Hash Browns and I came up with this Hashbrown Taco Casserole.

i know, sounds weird but hear me out. Whenever my BFF from back home and I would make late night runs to our favorite taco drive-thru, I always got a potato taco. I just love them!

So there’s everything that I’d put in a potato taco but without the taco shell! I used the Ore Ida Shredded Hash Browns, ground turkey, beans, olives, cheese. It turned out really good and if you had some taco shells in your pantry, you could definitely make a extra delicious meal by stuffing this into them!

I was sitting next to my husband on the couch while I was working on these photos yesterday and kept asking him “If I call this a pumpkin cheese ball, will they assume there’s pumpkin in it? That I rolled a ball of pumpkin in Doritos crumbs? WILL THEY CLICK THAT X UP THERE AS SOON AS THEY SEE THE TITLE?!” He has assured me that you won’t think that. So here’s hoping he’s right.

It definitely doesn’t have any pumpkin in it but it is rolled in those Doritos crumbs I mentioned and then topped with a bell pepper stem so it looks like a pumpkin. It’s actually kind of taco-y. My husband’s mom makes a taco salad dip that starts with a layer of cream cheese mixed with taco seasoning and this reminded me so much of that. If you’ve had that kind of dip, you’ll know what I’m talking about.

It was so delicious and addictive. I found myself making unnecessary trips to the kitchen just so I could grab another chip covered in cheesiness. My husband was on 24-hour staff duty the day I made it and I swear I got 6 texts during that time reminding me not to eat all of it.

And look how cute it is!

Pumpkin Cheese Ball

Ingredients
  • 16 ounces cream cheese softened
  • 2 cups cheddar cheese
  • 3 tablespoons finely diced onion
  • 1/2 cup chunky salsa
  • 1 teaspoon ground cumin
  • 2 cups Doritos crumbled
  • top of 1 green bell pepper for stem garnish
Instructions
  1. In the bowl of a stand mixer, beat together the cream cheese, cheddar cheese, onion, salsa, and cumin. Beat until well mixed and creamy.
  2. Scoop the mixture into plastic wrap and shape into a ball. Refrigerate for at least 2 hours.
  3. When ready to serve, roll ball in Doritos until covered. Place bell pepper stem on top. Serve with tortilla chips, crackers, or fresh veggies.
