So I thought for 2015, we’d do something a little more casual on Fridays. Still mostly food related but maybe not a recipe and maybe not involve photos that have to be taken with the big camera. Yeah? If you have any ideas/requests/suggestions, feel free to leave them as a comment or tweet me or whatever.

I thought we’d kick it off with a healthy post since it is January and I know a ton of people doing a Whole 30 or just trying to eat healthier. These are most of the meals I had over the past week and most are completely Paleo. 

Disclaimer: I’m not 100% Paleo. Yesterday I had a Diet Coke, two Cookie Butter Cups, and two macarons. Whoops. Most of my meals are Paleo though. It’s those dang snacks that get me.

This is my favorite recipe EVER. It’s a Bolognese made with ground beef, ground pork, and bacon. And omg, it’s so good. Like, sometimes I don’t even make zucchini noodles or spaghetti squash – I just eat it cold out of the pyrex. 

Later today I’m making a double batch to keep on hand. I love it that much.

I got my spiralizer from Amazon. It’s by Pacific-V and it’s the cheapest one on Amazon. I use it just about every day of my life. Zucchini, sweet potato, butternut squash… they all make delicious noodles when you’re sick of spaghetti squash. 

 

This is my current obsession. And it’s not 100% Paleo so forgive me. I cook up a Trader Joe’s Mahi Mahi Burger (which says “less than 2%” of rice flour and potato starch or something like that) and then lightly cook kale mix just so it’s kind of wilty but still kind of crunchy. And then a couple small tomatoes sliced up with salt and pepper. I would eat this every night of my life if those burgers weren’t $6.99 a pack.

The problem with Paleo food is that it’s really ugly most of the time. This is my go-to breakfast though. It’s acorn squash (I cook two every week and scrape out all the insides and just store it in the fridge until I need them – yeah, I go through two a week!), Paleo-friendly chicken breakfast sausage (from Whole Foods), and eggs or egg whites depending on my mood. And then I top it with not-Paleo-friendly Sriracha.

I just cook it all up in the same skillet and kind of mash it all together. If I’m feeling frisky, I’ll add a spoonful of maple syrup to it while it’s cooking. So good. 

This is another favorite. Okay, these are all my favorites. I just like food. A lot.

I cook 2 – 4 slices of bacon and then throw spiralized sweet potatoes and lots of black pepper in the fat (drain some off if necessary) and cook until the potatoes are tender. And then I fry an egg in what’s left of the bacon fat.

Mmm, fat. 

Then I stir it all together so the egg yolk coats everything. It’s amazing.

Eggs are always a good choice for any time of day. If I need a low calorie but filling snack, I’ll do an egg, an egg white, 1/4 of an avocado, and salsa. Two hard-boiled eggs with a couple slices of bacon make a great breakfast, snack, lunch, whatever! 

These Lettuce Wraps are my husband’s favorite. They’re made with ground turkey and mushrooms and water chestnuts for a little crunch. I use coconut aminos instead of the soy sauce in the original recipe and then I put chopped cashews on top. 

We had them last night and between my husband and I, we killed the whole pan. 

And because life shouldn’t be all meat and lettuce, Paleo Blueberry Muffins! With bacon. Duh.
