Granola Cookies

Ingredients

  • ½ cup coconut oil
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup rolled old-fashioned oats
  • ¼ cup ground flaxseed
  • ½ cup sunflower seeds
  • ¾ cup unsweetened coconut flakes
  • 1 cup chocolate chunks
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
  2. Beat coconut oil and brown sugar in a bowl on medium speed until well combined, about 3 minutes. Beat in eggs, one at a time, and vanilla. Add flour, baking soda, and salt; beat until just combined. Stir in remaining ingredients. Refrigerate until firm, about an hour.
  3. Drop heaping tablespoons of dough onto the prepared baking sheets, 2 inches apart. Bake 13 - 14 minutes, rotating the pans halfway through. Cool completely on a wire rack before serving.
