Paleo Mocha-Bacon Brownies

Ingredients

  • 4 ounces dark chocolate
  • ½ cup butter or coconut oil melted and cooled
  • ½ cup pure maple syrup
  • 3 eggs
  • ½ cup + 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons strong brewed coffee
  • 2 slices bacon cooked and chopped

Instructions

  1. Preheat oven to 375F. Grease a 9x9-inch pan with coconut oil.
  2. In a mixing bowl, stir together the melted dark chocolate, coconut oil, maple syrup, and eggs. Whisk in the cocoa powder. Add the coffee and whisk until combined.
  3. Pour batter into prepared pan and sprinkle the bacon over top. Bake for 20 - 25 minutes, or until a toothpick in the center comes out clean.
