Hawaiian Sloppy Joes

Ingredients

  • 5 slices bacon diced
  • 1 pound lean ground beef
  • 1 medium onion diced
  • 1 green pepper diced
  • 3-4 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • ¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon cider vinegar
  • 1 tablespoon soy sauce
  • ½ cup pineapple juice
  • salt and freshly ground black pepper to taste

Instructions

  1. Over medium heat, cook the bacon until crisp. Remove to a paper towel-lined plate to drain.
  2. In the same pan (drain off fat if necessary), cook the ground beef, onion, and green pepper, breaking up the ground beef as it cooks. Cook until the vegetables have softened and the beef is cooked through. Add the garlic and ginger; cook until fragrant, about 30 seconds.

  3. In a mixing bowl, whisk together ketchup, brown sugar, cider vinegar, soy sauce, and pineapple juice. Pour into the pan with the turkey and stir to combine.
  4. Bring to a simmer, cover, and let cook for 15 - 20 minutes or until the sauce has thickened considerably but is still "sloppy". Crumble the bacon and stir it into the mixture. Serve on buns.
