Bacon and PIneapple Fried Rice

Ingredients

  • 1 bag Success® Boil-in-Bag Basmati Rice
  • 2 tablespoons soy sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon rice wine vinegar
  • 1 clove garlic minced
  • ¼ teaspoon ground ginger
  • ½ pound bacon cut into bite-sized pieces
  • 1 small jalapeño minced (use less if you don't like much heat)
  • 3 green onions whites and greens, sliced thinly and kept separated
  • ¼ cup cilantro chopped
  • ¼ cup fresh pineapple diced

Instructions

  1. Cook Success® Boil-in-Bag Basmati Rice according to box instructions. Refrigerate overnight.
  2. When ready to cook, whisk together soy sauce, fish sauce, rice wine vinegar, garlic, and ground ginger. Set aside.
  3. Heat a wok or very large skillet over medium-high heat. Cook bacon pieces until almost crisp. Remove bacon with a slotted spoon to a paper towel-lined plate. Drain all but 1 tablespoon of the fat from the skillet and return to the heat. Raise the heat to high and add jalapeño and the white parts of the green onion; cook, stirring, for 1 minute. Add the cooled Success® Boil-in-Bag Basmati Rice, breaking up the rice in your hands as you add it. Stir-fry the rice until it is lightly browned and heated through. Add the soy sauce mixture and continue cooking and stirring until all the sauce is absorbed. Stir in the bacon, the green parts of the green onions, cilantro, and fresh pineapple.
  4. Serve hot.
