Preheat oven to 350F. Line a large baking sheet with parchment paper.

Pat the sugar cookie dough into a large circle about ¼" thick.

Bake for 15 - 18 minutes or until the sugar cookie is golden brown. Cool completely before proceeding.

Beat the cream cheese, peanut butter, and vanilla together until completely smooth. Add milk as needed to get a spreadable consistency. Spread the mixture oven the cooled sugar cookie crust. Arrange apple slices on top.

Sprinkle with peanuts and cinnamon; drizzle with caramel sauce.
