Bacon Pimento Cheese Deviled Eggs

Servings 12 deviled eggs

Ingredients

  • 6 large eggs
  • 2 - 3 tablespoons mayo
  • 2 teaspoons dijon mustard
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 teaspoons diced pimentos plus more for garnish
  • 2 teaspoons dill pickle relish
  • ¼ cup shredded cheddar cheese
  • 2 slices bacon cooked and crumbled
  • salt and pepper

Instructions

  1. Boil a large pot of water. Add eggs and boil for 10 minutes. Carefully remove from water and transfer to a large bowl filled with ice water. Peel when cool enough to handle.
  2. Slice each egg in half and transfer the yolks to a mixing bowl.Stir in 2 tablespoons mayo, mustard, onion powder, garlic powder, pimentos, and pickle relish. Add the remaining tablespoon of mayo if it seems too thick. Fold in cheddar cheese and most of the bacon. Season with salt and pepper to taste. Spoon into the egg whites and sprinkle with bacon and pimentos, if desired.
