Banana Pudding Poke Cake – super delicious cake that starts with a boxed mix and is filled with banana pudding! Tastes like an old-fashioned layered banana pudding!
I tried to make lemon bread the other day.
Because I’ve had Starbucks lemon bread on my brain for weeks but last time I tried to reload my Starbucks card, it charged my paypal account 3 times and still hasn’t loaded that money onto my card.
So I broke up with Starbucks.
We’re getting back together next week when the S’mores Frappuccino comes out.
But anyway, shortly after I’d gotten all my wet ingredients mixed together and then measured flour into a separate bowl, I realized I have no baking powder.
Or baking soda.
Or salt.
Doh!
Banana Pudding Poke Cake!
I couldn’t not have cake though so I found a cake mix and poked some holes in it and turned it into a Banana Pudding Poke Cake.
Banana pudding is my alltime fave dessert so I was all about this.
The pudding soaks into the cake and makes it super delicious. Plus, it’s topped with whipped cream and then crushed vanilla wafers.
Honestly.
Could’ve eaten the entire cake myself.

- 1 box yellow cake mix plus all ingredients to prepare
- 1 3 ounce banana cream pie pudding mix, plus all ingredients to prepare
- 1 8 ounce container frozen whipped topping, thawed
- 20 vanilla wafer cookies coarsely chopped

Prepare cake mix and bake as a 9x13" cake, following the instructions on the box. Cool for about 10 minutes. Take a fork and poke holes all over the cake.

Prepare pudding mix according to the package instructions. Let cool slightly if you had to boil it. Pour over the cake.

Refrigerate until cool. Spread the frozen whipped topping over the top and sprinkle with the cookies.

Refrigerate until ready to serve.

I am so happy there is no Starbucks close to me because I would go broke on the Double Chocolatey Chip Frappuccinos! I have yet to make my own poke cake, but seeing how easy they are (and how good they look!) I must get on it sooner than later!
I haven’t had a poke cake in ages…and I’ve never had one with banana pudding – this sounds so ridiculously delicious.
I’ve broken up with Starbucks many times. But we always work it out. Co-dependent and all. So, funny thing about bananas – It takes a lot for me to want to eat one on its own. Like I need to be starving. But I absolutely love love love them in desserts. I want 4 slices of this.
I cannot wait for s’mores. There is a s’mores frappucino coming out soon?! I need it! I also need this poke cake! There’s nothing better than cake, pudding and whipped cream ;)

Poke cake is a food that reminds me of my childhood. My mom never made it with banana pudding so that means i need to make it immediately. Oh and I’m totally hitting up Starbucks for that s’more frappe…yum!

This happens to me far too often – I’m in the middle of making something and realize I’m missing like tons of the essential ingredients! Except I’m not as creative as you and able to turn it into a masterpiece like this poke cake – how awesome!! It looks and sounds so good!
Breaking up with Starbucks is hard to do, boo!! That lemon bread is pretty amazing, buuuuut THIS? This sounds waaaaay better! The frozen whipped topping is making my heart pitter-patter!

Me and Starbucks have a love/hate relationship like that too… I hate the card reloading thingy. But I guess I would give them another chance for a s’mores frappe. And I’d marry them if they served banana cake like this. With a frappe, too. Natch.
