When my mom was here last week, I was trying to sell her on Texas and I was all, “Mangoes are only $.50 in the summer! And avocados are 3 for $1! THREE AVOCADOS FOR ONE DOLLAR!”
Didn’t convince her to move here and help me take care of all my kids but hey, it really is one of my favorite things about Texas.
So yeah, I’ve been buying avocados by the dozen it seems like and then all of a sudden, they’re all about to go bad and I’m forced to make a huge batch of guacamole and then eat it all myself since my kids won’t touch it.
Rough life, right?
Grilled Corn and Bacon Guacamole!
My other current obsession – besides cheap avocados and mangoes – is corn. It’s so cheap and so delicious right now. At one point I bought, like, 12 ears of corn and my boys went through them in a day.
So for this Charred Corn and Bacon Guacamole I grilled up a couple ears of corn (you could totally use the frozen roasted corn from Trader Joe’s if you have 15 bags of it in your freezer at all times – just me?) and then cut the corn from the cob and stirred that in. And then to conteract the sweetness, I added some salty bacon.
And then I served it with lime tortilla chips because is there anything better than lime tortilla chips with guacamole? Just make it, trust me. And do it soon.

- 3 ripe avocados
- 4 slices bacon, cooked and crumbled
- 2 ears fresh corn, grilled until charred in places
- ⅓ cup red onion, finely diced
- 1 jalapeno, minced
- juice of half a lime
- 2 tablespoons cilantro, minced
- salt and pepper
- In a large mixing bowl, mash avocados to desired consistency. Gently fold in bacon, corn, onion, jalapeno, lime juice, cilantro, and salt and pepper. Cover tightly and refrigerate if not serving immediately.
