Y’all. I think something’s wrong with my brain.
I’ve had this cold literally since the day after my kids went back to school. It’s one of those that gets better but not all the way better and then it gets worse, then better, then worse. So after 3 weeks of this, I think it’s really messing with my brain.
I cannot do anything.
Yesterday I went out to the car and found a grocery bag from Monday.
It had bacon in it. And avocados.
Yummy.
I showed up to the wrong field last night for the kid’s football game.
I couldn’t remember how to open the car’s hood when I got searched at the gate a few days ago.
I just feel like I am so out of it.
Just thought I better warn you guys in case I start posting strange recipes or something. Stranger than Totchos, of course.
So Totchos are tater tots dressed up like nachos. These have cheese and bacon and avocado and other fun things that I had to pick off for my kids. I’m obsessed. They’re like loaded fries but better because duh, tater tots are better than fries.
Definite football food! The best way to serve them is in a bowl with ranch dressing drizzled over everything. And then you use a fork to eat them so you can make sure you get a jalapeño in every bite. I mean a little of everything in every bite. #jalapeñoobsessed

Loaded Totchos
Ingredients
- 1 28 ounce bag tater tots
- 2 cups shredded sharp cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1 roma tomato, seeded and diced
- 1 avocado, diced
- 2 green onions, sliced
- ½ cup pickled jalapeños
- ranch dressing, for serving
Instructions
- Cook tater tots according to package instructions. In the last few minutes of baking, add the cheese.
- Once you remove the cheesy tots, top with bacon, diced tomato, diced avocado, sliced green onions, and pickled jalapeños.
- Serve with ranch dressing for dipping.

Hope you feel better soon! I hate the “fog” that being sick brings. It feels like your head is all cloudy and you just feel out of it. On the bright side, you have a big plate of these to cheer you up! I LOVE tater tots and the idea of putting them in nacho form? GENIUS!!

I’m so sorry – those sicknesses are the worst! We caught a cold I think from flying and being in the airport and it sucks being sick. I forget everything and get nothing done! These totchos are definitely perfect football food or really any night good stuff – I love all the toppings they look awesome!
