I had the worst cold last month.

It lasted for weeks, I had to sleep sitting up, and I went through more cold medicine than I’ve taken in my entire life.

It was awful.

Anyway, I was taking Nyquil so that I wouldn’t cough my lungs up all night and Nyquil always makes me have really crazy, vivid dreams.

The kind of dreams where you wake up mad at your boyfriend because of something he did in your dreams and then you start an actual argument with him over it.

You know?

Well one of those dreams was about peach ice cream and I’ve been thinking about peach ice cream ever since.

How was the week?

I’m finally getting over this cold that I was starting to think I would have forever so we actually ventured out of the house and saw Incredibles 2 which was so good. I’ve never seen the first one but I loved this one.

I’ve barely left the house besides that. This cold has kicked my butt.

I went to Trader Joe’s. Duh.

I currently have the cold that won’t go away and I told BF I was going to Urgent Care but I ended up in Austin because a poke bowl sounded better than Urgent Care. And since I was down there, I couldn’t pass up the opportunity to stop into Trader Joe’s to see if they’d restocked cauliflower gnocchi (they had) and get some flowers for my kitchen.

Since I’ve been kid free, I’ve been hanging out a lot more with adults and people I don’t really know and I’ve had to explain my blog a lot.

It always comes out, “Well, it’s mostly paleo but I do a lot of dog treats and cocktails and uhh… *nervously downs entire glass of wine* yeah, paleo.”

Okay, so Texas is extra hot this year.

Like, it’s steamy.

Last summer, we spent entire days at the lake. This year? Two hours and we’re done.

It’s too hot.

Obviously the dogs are hot, too. Especially the husky. She loves to be outside but she’s just miserable. Even when we wait until after sundown to take her for walks, she still pants for hours afterwards.

I haven’t done a blog post in 3 months and it’s a little weird to jump back into it.

Nothing happened, really. Just the usual end of school stuff and then we’ve been stupid busy with summer activities. So I’ve just been working on behind the scenes blog stuff when I get a few minutes and just haven’t felt like cooking much.

And doesn’t everyone stop cooking in the summer? My kids have had sandwiches and quesadillas and cereal for every meal since school got out.

Anyway.

I’m kid free for a few weeks and I haven’t been kid free in 11 months. Not even a single night away from them.

I had a list of things to do and they all included yoga.

There was goat yoga and happy hour yoga and paddle board yoga is this weekend.

But yeah, I made something! And hauled out all my photo stuff! And somehow remembered how to use a camera! It’s a miracle!

I’m really not a breakfast person and I’m definitely not a fan of the sweet breakfast stuff. I love paleo pancakes, paleo waffles, all that yummy sweet paleo stuff. But I love them later in the day.

I need a savory breakfast or nothing at all.

The problem is, a lot of the typical savory options aren’t paleo. Paleo bacon has become easier to find but paleo breakfast sausage still isn’t showing up in my local grocery stores.

Everything is so loaded with sweeteners, fillers, and all sorts of things that definitely aren’t paleo-approved.

These Paleo Maple Blueberry Turkey Breakfast Sausage has a bit of sweetness (and obviously uses maple as a sweetener but that’s paleo okay!) to them but they’re still savory enough that I consider them breakfast appropriate.

Before we moved, I had this routine when my kids were with their dad for the weekend. And by routine, I mean I didn’t leave my house. I would marathon whatever season of American Horror Story fit my mood and I’d order pho every day the kids were gone. And my favorite pho place back in our old city had the best pork spring rolls. It was super thinly sliced, super flavorful pork rolled up with all the veggies and served with a peanut dipped sauce.

And now I live 45 minutes from them and they won’t bring me spring rolls.

So I’ve started making my own pork spring rolls and when I’m too lazy to actually roll them, I’ll do this Pork Spring Roll Bowl.

It’s everything I love about those spring rolls: rice noodles tossed with a light and spicy peanut sauce, thinly sliced carrots and cucumber, fresh cilantro and mint, chopped peanuts, and the pork, of course.

Margarita Tuesday!

That’s a thing, right?

That’s one thing I really miss about Colorado Springs. The margaritas. We used to go to our favorite Mexican place (3 Margaritas on Powers) at least once a month because they had the best tacos and a ginormous margarita menu. I mean, we were there for 4 years and we didn’t get through the entire margarita menu.

I live in Middle of Nowhere, Texas so there really aren’t decent margaritas around here and whenever I’m in Austin, it’s 9 am or I’m driving or… well, it’s just never the appropriate situation for a margarita.

So I’m forced to make my own margaritas. On Taco Tuesday. Which is probably going to be Cereal Tuesday or Mac and Cheese Tuesday if we’re being completely honest.
