Hi guys, I made pancakes.

I don’t make pancakes. I haaaaate making pancakes.

I can’t make a decent pancake to save my life.

I would rather stand at the waffle maker all morning, making one waffle at a time, than even attempt to make pancakes.

But you guys, look at my pancakes!

Aren’t they beautiful?!

I made so many batches of pancakes last weekend and I think I’ve finally got it down.

This all started because I took my kids to IHOP last week when it wouldn’t stop raining and it was super depressing and the best way to eat your feelings is with a funny face pancake. I’ve had pancakes on the brain since then.

Heeeey guys, happy Sunday!

How was the week? I told you guys all week that I’ve basically locked myself in my house for the last 7 days to just catch up on work. And also because it’s seriously been raining for a week now. It finally stopped this afternoon and it’s sunny and beautiful and I’m writing this is my bright blue lawn chair that I’ve set up in the driveway because that’s where the sun is brightest.

Sorry neighbors.

Switched up the pizza thing this week with some mini calzones. I actually made these twice this week because the first time it started monsooning as soon as I put them in the oven and the pictures were garbage.

Strangely, no one complained about calzones twice this week.

Weird how calzones twice a week is fine but kale salad twice is a no go.

We’re making dog treats today!

It has been rainy and gross and the only time I’ve left the house all week was to sit at the coffee shop for a few hours to bang out some posts for Food Fanatic and clear out my inbox.

And there may have been a wine run after a very long Monday with the boys home allllll day.

Whatever. That hardly counts.

And since I’ve been home, I’m finally really breaking in the new kitchen. I think I’ve baked 10 things this week and y’all know I’d all but given up on baking the last few months.

Kitchen Sink Oatmeal Cookies – oatmeal cookies filled with everything but the kitchen sink! Chocolate chunks, white chocolate chips, cinnamon chips, walnuts, raisins, and coconut!

When we moved I realized I had a lot of mostly empty bags of chocolate chips.

A lot.

Same goes for pecans, shredded coconut, almond meal, bottles of vanilla, all the stuff I always think I’m out of when I’m out the store and apparently am never actually out of it.

Plus, 15 packages of almond bark even though I only use almond bark once a year for crockpot candy…? I don’t know, guys.

I guess everyone I know is getting crockpot candy for Christmas next year.

Last cheater week, I promise. Maybe.

Okay, hopefully.

My life is still a crazy busy mess. So crazy that BF was actually in charge of this recipe. He made these Texas Toast Pizzas for the boys months and months ago and I noticed them when I was scrolling through the pictures on my phone while avoiding doing something important and time sensitive early last week.

ANYWAY. I casually mentioned to him that I was thinking about making them for this post and the next day all the ingredients were magically in the kitchen and he was ready to make them for me.

If I haven’t mentioned it yet, I don’t deserve him.

Also, yesterday he was outside washing his truck and came inside and said, “There’s a big long-haired German shepherd out here if you want to meet it” and yes, of course I want to pet the giant dog while you make small talk with the neighbors. This is exactly how I need this relationship to work.
