When my mom was here last week, I was trying to sell her on Texas and I was all, “Mangoes are only $.50 in the summer! And avocados are 3 for $1! THREE AVOCADOS FOR ONE DOLLAR!”

Didn’t convince her to move here and help me take care of all my kids but hey, it really is one of my favorite things about Texas.

So yeah, I’ve been buying avocados by the dozen it seems like and then all of a sudden, they’re all about to go bad and I’m forced to make a huge batch of guacamole and then eat it all myself since my kids won’t touch it.

Rough life, right?

Hey ya’ll! How was the long weekend?

My kids were with their dad so I had 3 glorious days of doing whatever I wanted. But still, I was pretty excited to get them back last night.

I ran to Target yesterday morning for some recipe supplies and found myself buying them all new shoes and it turns out I kinda miss them by day 3.

I also made this Maple Bacon Monkey Bread yesterday in anticipation of them coming home.

You guys know how I feel about bacon in sweets. It may be my most favorite thing in the world. I mean, I have fudge, rice krispies treats, a doughnut burger with candied bacon, and probably many more recipes that I can’t think of right now.

I’m obsessed.

I haven’t talked to you since Halloween so how was trick-or-treating? We’re really lucky that literally everyone in our large neighborhood has kids so Halloween is always a fun night around here.

But I guess now it’s time to move onto Thanksgiving.

Or Christmas according to my Snapchat feed.

You guys. Stop. It’s too early.

Normally I’m that psycho putting out lights the day after Halloween but I just can’t handle it happening so early this year.

Plus, it’s still stupid hot in Texas.

I won’t lie, though, I was in Austin yesterday and may have run into Trader Joe’s for some of their holiday goodies. Christmas trees, I can skip for now. Buttercream truffles? GIMME.

So if you follow me anywhere, you know I was in Austin at BlogHer Food all weekend. It’s a conference for food bloggers where we all talk about what annoys us about our job and then we eat everything in the city.

And, in case you’ve ever wondered, I am horrible at conferences. (Very good at the eating part though.)

I showed up for 3 things the entire conference. And only stayed the full time for 1 of those.

Sitting still is hard for me, y’all.

Also, I sat down with a group of girls I didn’t know for the closing keynote and they asked if I had a business card.

And I didn’t.

I mean, do I seem like the kind of girl that carries business cards?

Anyway, one of the girls said, “Aww, you must be a new blogger!”

So that was kind of how the conference went for me.

I did get to hang out with friends that I’ve only ever known over the internet which was honestly the only reason I went to begin with so that totally made up for the conference being… ahem… lame.

And also there was lots of food!

I did that thing where I swore I was going to stay home all weekend and clean my house and then ended up doing the exact opposite.

The monthly food truck festival over in Temple snuck up on me this month and you know I can’t miss that! So the kids and I headed over there Saturday. My favorite truck wasn’t there this month but I did have a delicious plate of Hawaiian Pulled Pork Fries and something called a Redneck Taco.

The redneck taco? Honestly, I ordered it just for the name and now I can’t stop thinking about it.

It was cornbread with rice, brisket, sausage, beans, and nacho cheese on top.

It was ridiculous and amazing and I’ll be looking for that truck next month.

Almost every week when I do my big grocery shopping trip, I buy a tub of pimento cheese and a bag of those long pretzel rods and then I dip the pretzels in the cheese and that’s all I eat until it’s gone.

I mean, is that not one of the weirder things for someone to be obsessed with?

Maple Bacon Bread - perfect for toast, sandwiches, or just as a side with dinner!

But first, I have to tell you what I did for my first day of freeeeeeeeeedom (aka the day all the kids went to school).

The husband is actually home right now which is a first. I’ve had kids in school for 4 years now and he’s never been home for it. So he was able to walk the kids to their classrooms with me and then we went and sat at Starbucks for coffee. I don’t think I’ve sat down in Starbucks and had coffee in… well, probably since I worked there. In 2006. Then we ended up having froyo for lunch together.

I know this is, like, regular everyday stuff for normal people but I’ve spent a lot of time alone with kids these past few years (thanks deployments!) and it’s weird to be like a real person who gets coffee and is able to hunt for Pyrex without saying “STOP TOUCHING THAT!” over and over again.

Thankfully, the kids all loved their first day and are looking forward to going back today. Fun fact: Fat Baby (who’s not a baby) said his favorite part of the day was “sleep time”.

Peanut Butter Bacon S’mores

Last day of S’mores Week!

It has to include bacon. Because duh. Why wouldn’t I combine my two favorite foods ever?

I’m having this weird thing with flavored bacon right now. I’ve always been kind of a purist when it comes to bacon. I would only buy the plain, center cut bacon. But then I discovered honey bourbon bacon and my life hasn’t been the same since.

If you can find it (I’ve only seen it at Walmart but I live in Tiny City, TX so it may be in other stores – it’s by Wright Brand), I highly suggest using it for these s’mores. I mean, honey. And bourbon. Bacon. On s’mores.

If you can’t find it, maple bacon works too! Or just use regular bacon! Bacon is bacon and bacon is good.

Okay, so under the bacon is a Reeses peanut butter cup. S’mores made with peanut butter cups are THE BEST.

You should totally make these. Make them on your stove after your kids are in bed so you don’t have to share. I won’t judge you.

Nicole made Chocolately S’mores Ice Cream and it looks amazing! I would love a big bowl!

I hope you enjoyed S’mores Week! I know I did! I also know that my jeans are now a tiny bit tighter than they were last week.

Worth it.
