I think it’s so funny how the brain remembers the weirdest things.

Like, I remember a very specific tweet from probably 3 years ago that wasn’t even directed at me from someone who I’ve spoken to, maybe, 10 times in my Twitter lifetime.

It said: I mean, do we really need a recipe for a poke cake?

And I remember thinking that yeah, I totally need a recipe because all I know is you poke holes in it. I don’t know what to put in those holes, I don’t know what cake to use, I don’t know what to put on top.

I’d never given poke cakes a second thought but that tweet… that tweet made me want to make ALL THE POKE CAKES.

Since then, they’ve become my go-to “last minute” dessert. You know those nights when your husband walks in from work and says HEYIGOTTABEATAMEETINGINANHOURANDINEEDTOBRINGADESSERT.

And you’re just like, “Uhh, I’m on my second glass of wine and The Bachelor just started. Now is not the time for jokes.”

Chocolate M&Ms Cake Mix Cookies

Happy Memorial Day to all!

Fun plans? Please tell me all about the delicious grilled food you will be eating today! I am still terrified of our grill and since all our friends are either in Afghanistan or have moved, we’re probably just going to stay home and eat ice cream sandwiches.

Speaking of, if you have a Safeway near you, run – yes, RUN – and get a box of their birthday cake ice cream sandwiches. They have a layer of icing in them and omg, best thing ever.

But today we’re here to talk about cookies!

I’ve been kind of obsessed with cake mix cookies ever since I made those Watermelon Cake Mix Sandwich Cookies. They’re really great for people like me who decide that they want to have cookies ready for their kid when they get home from their last day of school. With only 20 minutes to spare.

And they’re delicious. Because duh, cake mix.

Chocolate M&Ms Cake Mix Cookies

Ingredients
  • 18.25 ounce chocolate cake mix
  • 2 eggs
  • 1/2 cup canola oil
  • 1/4 cup flour
  • 1 cup M&Ms
Instructions
  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. In a stand mixer with the paddle attachment, beat together cake mix, eggs, canola oil, and flour until everything is incorporated. Stir in 3/4 of the M&Ms with a rubber spatula.
  3. Drop by heaping tablespoonfuls onto the baking sheet. Press remaining M&Ms onto the tops of the dough.
  4. Bake for 10 - 12 minutes or until set. Cool on a wire rack.

We had the best of both worlds. On Saturday we were eating watermelon in the backyard while wearing shorts and then Sunday we watched snow fall all day long!

I’m assuming most of your had nice Spring weather so I wanted to share this Spring treat! I think it’s my favorite thing I’ve made in months.

I know it looks like it’s for the kids but I won’t lie, it hit all my weird cravings on Saturday night – sweet and crunchy, chocolate, sour, chewy. I mean, everything I could ever want all in one cute little bucket!

And my kids went nuts for it, of course! They’re boys so they like anything gross and eating bugs and dirt was pretty exciting for them.

It would be super cute at a kids birthday party served in mini buckets with tiny shovels.

It’s bad.

I’m currently trying to distract myself from clicking “confirm” on a ginormous Sephora shopping cart by baking every Christmas treat I can think of.

Peanut Brittle

Do you give baked goodies as gifts around the holidays?

I think I did one year and I really enjoyed it but in recent years I just haven’t felt as confident in my baking abilities and have been too scared to give anything away.

I always feel like people are telling me they like something just so they don’t hurt my feelings!

Peanut Brittle!

I wanted to make some peanut brittle just because I hate making candy and needed to see if I could actually make it.

Amazingly, it was super simple and took less than an hour to make! You just boil corn syrup, water, and butter until it hits the soft crack stage on your candy thermometer, stir in the peanuts, and keep boiled until it hits hard crack. So easy!

Peanut brittle is one of my favorite holiday treats so it’s pretty exciting that I know I can make it now.

Yield: about 24 servings

Peanut Brittle

Peanut Brittle

Prep Time 20 minutes
Cook Time 35 minutes
Total Time 55 minutes

Ingredients

  • 1 cups sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/4 cup butter, no substitutes
  • 2 1/2 cups peanuts
  • 1 1/2 teaspoons baking soda

Instructions

  1. Butter 2 large baking sheets; set aside.
  2. Butter sides of a heavy 3-quart saucepan. In pan combine sugar, corn syrup, water, and butter. Cook and stir over medium-high heat until mixture boils. Clip a candy thermometer to side of pan. Reduce heat to medium-low; continue boiling at a moderate, steady rate, stirring occasionally, until the thermometer registers 275F, soft-crack stage (about 30 minutes). Stir in nuts; continue cooking over medium-low heat, stirring frequently, until thermometer registers 295F, hard crack stage (15 to 20 minutes more).
  3. Remove pan from heat; remove thermometer.
  4. Quickly sprinkle baking soda over mixture, stirring constantly. Immediately pour onto prepared baking sheets. Use 2 forks to lift and pull candy as it cools. Cool completely; break into pieces. Store tightly covered up to 1 month.

Marbled Brownies

I haven’t made brownies since February. That is way too long to go without a brownie.

I remedied that whole situation recently when I made these marbled brownies that are topped with M&M’S® Brand Milk Chocolate Candies before baking to add a little something special to them. I make a bunch of goodies with these candies but there’s something about the M&M’S® Holiday Blend that speaks to me. I swear they taste better when they’re green and red.

This recipe comes from BrightIdeas.com which has tons of fun recipes, featuring M&M’S® Brand Chocolate Candies like these Reindeer Antlers and even craft ideas like these Festive Reindeer Favors.

I think it goes without saying that these brownies are spectacular. Brownies + cheesecake = perfection.

It starts with a boxed mix which is always a plus since it cuts down significantly on the prep time. Then the cheesecake mixture is swirled into the brownie batter. And then it’s all topped with festive M&M’S® Brand Milk Chocolate Candies.

Marbled Brownies
Ingredients
  • 1 box 8 oz. reduced fat cream cheese
  • 1/3 cup sugar
  • 1 egg
  • 1/8 cup milk
  • ½ teaspoon vanilla extract
  • 1 package brownie mix choose directions for the cake-style brownies
  • 1 cup M&M’S® Brand Chocolate Candies
Instructions
  1. In a mixing bowl, beat the cream cheese with the sugar. Add the egg, milk and vanilla extract. Set aside.
  2. Prepare the brownie mix according to the package directions. Spoon 2/3 of the brownie batter into a parchment-lined 9 x 13-inch baking pan. Spoon the reserved cream cheese mixture over the brownie batter. Now scrape the remaining brownie batter over the cream cheese mixture. Swirl the tip of a knife through the batter to make a marbled effect. Press M&M’S® Brand Chocolate Candies into the batter.
  3. Bake for 45-50 minutes in a preheated, 350-degree oven until slightly moist in the center. Cool completely before cutting 8x4 into 1½-inch squares.

Spooky Eyes Pretzel Bark

It’s time for my final Halloween post! I hope you guys enjoyed the week and got some good ideas for spooky treats.

And sorry this post is much later than it usually is. Normally I prep posts at night and then type something up early in the morning but I was feeling especially lazy this morning and then I had to get my spray tan on because I was also especially lazy yesterday and skipped my usual spray tan time. And then I got sucked into the vortex that is Target. AND THEN I got home to a very bad husky. I’ve been locking her in the older boys’ room because she breaks out of her crate and destroys stuff and I figure there’s not really much she can destroy in there. Well, she pulled up a tiny bit of carpet. So yeah.

Anyway, I saved this treat for last because it was my favorite. It is chocolate covered pretzels on steroids! This batch didn’t last 2 hours in my house. It’s so good and so cute with the little eyeballs on top. And btw, I’ve seen the eyeballs at Target, Walmart, and Michaels this year. You should be able to find them just about anywhere.

If you’re a fan of chocolate covered pretzels, I definitely recommend making this. Soon.

Spooky Pretzel Bark

Ingredients
  • 1 bag mini pretzels
  • 3 cups white chocolate
  • 2 cups semi sweet chocolate
  • mini Oreos M&Ms and spooky eyes ( all optional) for garnish
Instructions
  1. Line an 8x8 pan with parchment paper or aluminum foil.
  2. Cover the bottom of the pan in a single layer of pretzels.
  3. Melt white chocolate in a double boiler (or microwave if you prefer) until smooth. Pour over pretzels - go slow so you don't disturb them. Use a rubber spatula to smooth it out and make sure all the pretzels are covered. Lay another single layer of pretzels on top of the white chocolate. Allow to firm up at room temperature for about 20 minutes.
  4. Melt the semi sweet chocolate in a clean double boiler (or microwave) until smooth. Pour over the second layer of pretzels - once again, go slowly or your pretzels will get messed up. Smooth it out with a rubber spatula.
  5. Decorate the top with mini Oreos, festive M&Ms, and spooky eyes.

It’s been quiet around here this week, huh? Normally I prep all my weekly posts on the weekend so that all I have to do is go in the night before it posts and write a bunch of nonsense about my dogs, kids, nails, whatever. But since my husband was gone last weekend, I spent my time watching that Game of Thrones episode (you know the one) 5 times and trying on every piece of clothing in my closet. It’s what I do when I’m alone. Along with sleeping on the couch, working out twice a day, and sitting on the back porch talking to the neighbor’s dogs at all hours of the night.

Thankfully I have this Thursday series going with Nicole so I had to stop being lazy at least once.

This right here is the easiest candy recipe you will ever see.

(It will be even easier for you than it was for me because I know you don’t suck at melting chocolate. I, however, consider myself lucky that I got 2 decent looking bars. Someone come give me chocolate melting lessons. Please.)

So I don’t love Three Musketeers. I think it is the lamest candy bar. I mean, have you ever heard someone say, “Wow, I’m really craving a Three Musketeers”? Yeah, I haven’t either. BUT I saw this recipe on Beantown Baker almost a year ago and I remember tweeting about it. And then my friend Pam made it and told me how much she loved it.

It’s not often that I remember tweeting something. That recipe made a serious impression on me.

When I set out to do Halloween week, I immediately thought of the recipe. I pulled it up, saw the super short ingredient list, and made it that day.

They taste exactly like a Three Musketeers bar only better because hello! homemade. It’s got that bizarre spongy texture that the store-bought version has! Who knew Cool Whip and melted chocolate could create that! I’m so in love with these, y’all.

Ingredients
  • 1 8 oz container of frozen whipped topping, thawed
  • 2 cup semi sweet chocolate chips
  • 2 cup milk chocolate chips
  • 2 tablespoon vegetable oil
Instructions
  1. Line an 8 or 9-inch square pan with wax paper.
  2. In a medium bowl, melt semi-sweet chocolate chips in the microwave at fifty percent power, or use a double boiler.
  3. Using an electric mixer on high speed, beat melted chocolate for about 30 seconds.
  4. Add whipped topping to melted chocolate and beat until well combined and fluffy, 30-60 seconds more.
  5. Spread chocolate mixture evenly into prepared pan (if mixture is too stiff, press into pan with lightly dampened hands). Place in freezer for 30 minutes.
  6. Remove pan from freezer and turn chocolate mixture onto a cutting board; cut into one-inch squares. Return squares to freezer for another 15-20 minutes.
  7. Meanwhile, melt milk chocolate chips with 2 tablespoons of vegetable oil and stir until well combined. Dip frozen chocolate squares into melted chocolate to coat. Place on wax paper to set. Keep chocolates in an airtight container in the refrigerator.

Homemade Snickers Bars

Halloween is fast approaching, y’all. Ready?! I am. Kind of. I got the costumes months ago but I still haven’t been able to find all our Halloween decorations! I need to get on that. And I haven’t begun buying candy. Because I will eat all of it. In one day. I’m definitely that person that goes to the store on Halloween afternoon looking for whatever candy is left. I just can’t be trusted before then.

But since it’s getting so close to Halloween, I wanted to do a week of fun Halloween-y treats and we’re kicking off the week with Snickers! Because who doesn’t love Snickers?!

I’m not a candy maker, you guys know that, but I thought these came together beautifully. There are 3 steps – the nougat, the caramel, and then the coating. The nougat was fairly simple as long as you’re okay with a candy thermometer. Same with the caramel. It’s the chocolate that got me. I am just no good with melted chocolate. But it’s not appearance that matters, right?

They taste almost exactly like a Snickers. I think my caramel is a little chewier than the store-bought version but that’s to be expected with homemade caramel. They were a lot of fun to make and really upped my candy-making confidence.

Ingredients

For the peanut nougat:

  • 1 large egg white, at room temperature
  • 1/8 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/2 cup natural crunchy peanut butter, no added sugar

For the caramel:

  • 1 cup granulated sugar
  • 3/4 cup heavy cream
  • 1/2 cup light corn syrup
  • 4 tablespoons unsalted butter, 1/2 stick
  • 1/4 teaspoon kosher salt
  • 2 cups roasted salted peanuts
  • 1/2 teaspoon vanilla extract

For the chocolate coating:

  • 2 pounds chopped milk chocolate or chocolate melts

Instructions

For the peanut nougat:

  1. Spray a 13-by-9-inch baking pan with cooking spray, then line the pan with parchment paper, leaving a few inches of overhang on each side. Set aside.
  2. Place egg white in the base of a stand mixer fitted with the whisk attachment. Spray a rubber spatula with cooking spray and set aside.
  3. Combine sugar, corn syrup, and water in a small saucepan fitted with a candy thermometer and place over medium-high heat. Stir mixture until sugar completely dissolves.
  4. Once sugar mixture is at 270°F, add salt to egg white and beat at high speed to stiff peaks, about 2 minutes.
  5. Once sugar mixture reaches 275°F, remove from heat. Keeping the mixer on high speed, very slowly pour 1 tablespoon of the hot syrup in a thin stream down the side of the bowl (avoiding the whisk) and let it completely incorporate before adding more. Repeat until you’ve added all the syrup; it should take about 2 minutes. Continue to mix until nougat pulls away from the sides of the bowl, about 1 minute more. Turn off the mixer and, using the oiled spatula, stir in peanut butter; mixture should be thick and spongy.
  6. Immediately turn nougat into the prepared pan and, using the oiled spatula or your hands, spread mixture evenly. Let sit uncovered while you make the caramel, at least 5 minutes.

For the caramel:

  1. Combine all ingredients except peanuts and vanilla extract in a heavy-bottomed 4-quart saucepan fitted with a candy thermometer and place over medium-high heat. Stir mixture until sugar completely dissolves, about 2 minutes. Wash down the inside of the pan with a wet pastry brush to prevent crystallization. Boil mixture, swirling pan occasionally (but not stirring), until syrup is at 248°F, about 8 minutes.
  2. Immediately remove the saucepan from heat, stir in peanuts and vanilla extract, and mix until peanuts are evenly distributed. Pour caramel mixture over nougat and, using an oiled rubber spatula, spread evenly in the pan. Let cool until caramel is no longer warm to the touch and is opaque, about 70 minutes. Remove nougat-caramel mixture from the pan, transfer to a parchment-lined baking sheet, and place in the refrigerator until caramel is cool and gives slightly when pressed.
  3. Remove nougat-caramel mixture from the refrigerator and place on a cutting board, caramel side down. Cut into 4-by-1-inch rectangles (you need at least 24). Return to the parchment-lined baking sheet and place in the refrigerator to harden while you melt the chocolate.

For the chocolate coating:

  1. Melt chocolate in a double boiler (or the microwave).
  2. Line a baking sheet with parchment paper. Remove undipped candy bars from the refrigerator and drop them one at a time, nougat side down, into tempered chocolate. Cover caramel side with more chocolate, then remove candy bar. Use a fork to remove the bars to allow the excess chocolate to drip.
  3. Place bars on the baking sheet by tilting the fork(s) so the edge of each candy bar touches the parchment-lined pan, then smoothly pull the fork(s) out. Repeat until all candy bars have been dipped. Let sit at room temperature until completely set, at least 20 minutes.
  4. Trim any excess chocolate from edges of candy bars and place in an airtight container.

This Cookies & Cream Fudge is what I like to call Cheater’s Fudge. It’s so easy and turns out delicious every time.

You just melt chocolate with some sweetened condensed milk and then fold in chopped up Oreos. Seriously, that easy.

From there, you just have to wait for it to set up in the fridge (torture!) and then you can slice and enjoy!It makes a ton so you’ll have plenty for your cookie tins or to share at holiday parties.

It’s not going to have the exact texture as your normal candy thermometer fudge, but it’s so good that I don’t even care. Plus, you can’t beat how easy it is!

And yes, totally use different cookies if you want! And the holiday Oreos are especially fun in this!

Ingredients

  • 18 ounces white baking chocolate
  • 1 14-ounce can of sweetened condensed milk
  • 3 cups Oreo cookies, chopped

Instructions

  1. Line an 8 x 8 inch pan with parchment paper.
  2. Put white baking chocolate and sweetened condensed milk in a saucepan over low heat and stir frequently until chocolate is completely melted. Stir in Oreo cookies. Pour mixture into the prepared pan. Refrigerate for 2 hours or until set. Slice and bring to room temperature before serving.

Peppermint Bark

Ever since I tried my first peppermint bark candy waaaay back in November (heh..) I’ve been wanting to try my hand at making some. For some reason I expected it to be difficult but the only hard part was not digging in while it was chilling.

This is such a great holiday candy and now that I’m in love with it, I have a hard time imagining that there’s anyone out there who wouldn’t love it. I’m already looking forward to next year’s batch!

Peppermint Bark
Ingredients
  • 12 ounces semisweet chocolate finely chopped
  • 12 ounces white chocolate finely chopped
  • 1/4 cup whipping cream
  • 1 tsp Peppermint extract
  • 6 oz peppermint candies
Instructions
  1. Line a 13 x 9 baking pan with foil and coat with cooking spray.
  2. Melt the semisweet chocolate, peppermint extract and whipping cream and stir until smooth. Pour the dark chocolate into the baking pan and evenly smooth out. Place in the fridge for about 15 minutes to firm.
  3. While the chocolate is chilling, crush peppermints in a large, heavy duty plastic storage bag. Make sure you have smaller and larger pieces.
  4. Melt the white chocolate and stir until smooth. Remove the semisweet chocolate from the fridge and pour the white chocolate over top. Place in fridge to firm for about 1 hour. Remove and cut to your desired shape and size.
  5. Store in the refrigerator in an airtight container.
