I’m in love with this bowl right now.

So much that when I dropped the beautiful heart Pyrex that I love so much that happened to be holding the Korean beef, I may have cried a little. Over the beef. Not the Pyrex.

Yep.

Okay, so if you follow me anywhere, you know I’m obsessed with the bulgogi fries from one of the local food trucks.

Obsessed.

I think about them daily.

But they close on the weekends. And also, I probably shouldn’t be eating fries every day of my life. So I came up with this.

I’m obsessed with cauliflower again.

I’ve had it everyday for, like, a month straight.

For breakfast.

I know. 

I swear it’s amazing though! I do some riced cauliflower with some riced sweet potato with diced turkey bacon and a fried egg. And then just a tiny bit of maple syrup and a giant drizzle of sriracha on top. Sounds weird, but just trust me.

Heeey guys, happy almost Friday! How’s the week?

I’ve had a crazy busy week but besides one total meltdown that included sending crying snaps to multiple people (about shoes, y’all! SHOES!) it’s been a really good week.

Highlight of my week so far has been street tacos and nobody should be surprised by that. I’m kind of half-heartedly working on a post about the best restaurants in the area (without going to Austin) so if you’ve got any non-chain suggestions, send ’em my way!

One of my all-time favorite comfort foods is stuffed pepper soup.

I don’t like peppers, I’m not a huge soup fan, but for whatever reason, I loved stuffed pepper soup.

It was one of the first recipes I learned to cook after I was married and I am almost embarrassed to admit that we ate it probably once a week for several years. It was definitely a favorite.

Recently I had a pretty nasty cold (kids went back to school = mom is sick within a month) and as soon as I started feeling yucky, I started craving that stuffed pepper soup. (With paleo cornbread!)

Paleo Stuffed Pepper Soup is so incredibly similar to the version I cooked in the early years of my marriage. The only real difference is the processed canned soup is gone and replaced with tomato sauce and the white rice is replaced with cauliflower rice.
