Heeeeey guys! I can’t believe it’s Monday again. Why does this keep happening?!

Let’s go back to Friday, mmkay?

So how was the weekend?

I did that thing where I swore I was going to stay home all weekend and clean my house and then ended up doing the exact opposite.

The monthly food truck festival over in Temple snuck up on me this month and you know I can’t miss that! So the kids and I headed over there Saturday. My favorite truck wasn’t there this month but I did have a delicious plate of Hawaiian Pulled Pork Fries and something called a Redneck Taco.

The redneck taco? Honestly, I ordered it just for the name and now I can’t stop thinking about it.

It was cornbread with rice, brisket, sausage, beans, and nacho cheese on top.

It was ridiculous and amazing and I’ll be looking for that truck next month.

Day 2 of S’mores Week!

Okay guys, are they Muddy Buddies? Are they Puppy Chow? I always knew them as Puppy Chow but the first time I said, “WE SHOULD MAKE PUPPY CHOW!” to my husband, he looked at me like I was nuts.

So we’re calling them S’mores Muddy Buddies.

Anyway, I’ve successfully made it through all of season 1 and half of season 2 of Pretty Little Liars since last… umm… Thursday? I can’t even explain what’s happening to my brain. I’ve already seen every episode at least once.

Why am I randomly obsessed with a show about teenagers?

Tell me I’m not alone. Anyone else marathoning it in preparation of tonight’s season finale? Or mideason finale? Or whatever they call it? I am dying to know if we’ll actually find out anything important. My hopes aren’t high. This is PLL we’re talking about.

Back to the Muddy Buddies!

Instead of the usual Chex, this recipe calls for Golden Grahams and then you melt marshmallows into the chocolate mixture. And then you add extra marshmallows!

I thought for sure I’d be able to resist it since I’m not a huge chocolate fan but I couldn’t stop myself from going back for more. Over and over again.

Nicole made S’mores Chocolate Chip Cookies and I’m totally making them to scarf down while I continue watching Pretty Little Liars today!

Happy Sunday! Tomorrow my kids go back to school after 9 days off so we’re living it up with Cinnamon Toast Crunch Cupcakes! And probably a trip to the park to fly some kites that I found in the back of my closet while packing.

My kids are total cereal connoisseurs so they were pretty impressed by these cupcakes. They were, however, more impressed with the Skylanders Skystones game that came in the box of Cinnamon Toast Crunch.

Do you remember being a kid and being SO EXCITED when there was a toy in the box? I can remember standing in the cereal aisle and asking my mom for a specific kind just because it had a toy. And lucky me, I was an only child so I didn’t even have to fight anyone for the toy!

Happy Tuesday! Back to the real world today, huh? That long weekend sure was nice.

This morning I have to take Penelope (#idiothusky) to the vet for her regular ol’ checkup. And the big plan is to drop her off and then call Clementine’s (the cockapoo) hair girl to see if she can squeeze her in before Penelope gets home.

Because, yeah, you guessed it. She still thinks Clem is a new dog whenever she gets a haircut. Like, she actually growls at her and won’t let her near the food bowls. This has happened every 8 weeks for 2 years now.

#IdiotHusky for real.

So I’m hoping that if it happens while she’s gone, she’ll come home and think “Hey, you look different. But you’re still Clem.”

These are the things you have to think about when you live with a husky.

White Chocolate Peppermint Chex

If you do nothing else today, go to Starbucks, get a White Peppermint Mocha and then email me and tell me every single detail. 

I haven’t had a single red cup yet. Can you believe it? I’m currently avoiding Starbucks because I know I’ll get talked into gingerbread loaf or cranberry bliss bars or my favorite blueberry muffins. And you guys, DAYS from now my husband will be home. I can’t be stuffing my face with muffins. 

Guess what y’all! I got my car back! It was such a mess. But I got it back! 

You guys know I live on Fort Carson. So to get to my house you have to go through an ID check point. It’s really not a huge deal to get on post even if you’re not military. I mean, the ice cream man gets through, the UPS guys, I even saw the Oscar Mayer Wienermobile go through once. But for whatever reason the dealership shuttle guy couldn’t get through. Even though they had assured me days before that he could.

So the girl at the dealership was all, “I’ll just have my boyfriend pick you up.”

And now, looking back at it, I realize that she was just being super duper helpful and wanted to do whatever she could to get me my car. 

But at the time… 

At the time, I was convinced I was about the be kidnapped. Like, seriously convinced. Like, searching through my husband’s Army closet looking for something to put in my purse that could be used as a weapon.

Yeah, this is how my brain works. So I tweeted my BFF so someone would know what happened if I disappeared and then had a massive panic attack that I then convinced myself was a heart attack.

This went on all day.

I don’t even know what to do with myself. 

So they ended up sending the poor technician out to get me and all my children because by this time all of them were home. The poor guy got stuck in traffic for an hour then got stuck at the gate getting searched forever and then had to endure a 30 minute car ride of my children whisper-screaming at each other. I totally happy cried when he pulled my car around.

And then I sad cried when I paid the bill.

Anyway, back to white chocolate and peppermint! I made Chex Mix! Well, kind of. It’s really just Chex cereal covered in white chocolate and crushed peppermints. Super simple, my favorite winter flavor combination, AND it will hold you over while you wait for the White Chocolate Peppermint Pringles to show up in the grocery stores.

We had the best of both worlds. On Saturday we were eating watermelon in the backyard while wearing shorts and then Sunday we watched snow fall all day long!

I’m assuming most of your had nice Spring weather so I wanted to share this Spring treat! I think it’s my favorite thing I’ve made in months.

I know it looks like it’s for the kids but I won’t lie, it hit all my weird cravings on Saturday night – sweet and crunchy, chocolate, sour, chewy. I mean, everything I could ever want all in one cute little bucket!

And my kids went nuts for it, of course! They’re boys so they like anything gross and eating bugs and dirt was pretty exciting for them.

It would be super cute at a kids birthday party served in mini buckets with tiny shovels.

I made these Almond Bark Drop Cookies last year on Christmas Eve so I didn’t get a chance to blog them.

So obviously They were the first cookie on my list for this year and I have already made them twice!

We made them for my kid’s cookie exchange at school and they were perfect because they’re no-bake so he (a 6 year old) did almost all of the work by himself!

And then I made them again because… they were all gone and I was sad.

Like, I’m so used to doing my shopping around this time that I can’t control myself. Every time I go into a store I’m all “Mmm, maybe I should just get one more dog toy/Hot Wheels/giant Reeses cup!”

It’s bad.

I’m currently trying to distract myself from clicking “confirm” on a ginormous Sephora shopping cart by baking every Christmas treat I can think of.

Pumpkin Spice Rice Krispies Treats

I forgot to blog yesterday.

I mean, seriously. And that never happens. (Being lazy is a different story. That happens all the time).  I swear I’m losing my mind. Last Thursday I forgot to cook dinner. Just forgot. My husband came home and I followed him into the kitchen and then was all “CRAP! I KNEW THERE WAS SOMETHING I NEEDED TO DO!” And then Saturday night he was nice enough to go get me some Chinese food and on the way out the door he asked if I’d make a pot of coffee and I swear it immediately left my brain.

I’m blaming the weather. Or maybe I’m just getting old.

I made these Rice Krispies Treats yesterday because I’m obsessed with Rice Krispies Treatsright now. This was one of those times I told myself I was only going to take a nibble to test it out and then feed the rest to the kids. Do I need to tell you how that turned out?

I used this pudding mix and I suggest you go out and find some immediately and then buy all that’s on the shelf. I’ve been searching for it for a few weeks and finally found it at my Walmart. I bought a couple boxes and then regretted it and went back for me. Sold out. Omg. So yeah, go now. To Walmart. Buy it.

Pumpkin Spice Rice Krispies Treats
adapted from Rice Krispies
Ingredients
  • 3 tablespoons butter or margarine
  • 1 10 ounce package of marshmallows
  • 3 tablespoons Pumpkin Spice pudding mix
  • 6 cups Rice Krispies
Instructions
  1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in pudding mix until combined
  2. Add Rice Krispies and stir until it is well coated.
  3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool completely before cutting and serving.

I love any excuse to put hearts up in every room of my house. And this year is even more exciting for me because I finally have a kid in school which means I finally have an excuse to buy those cute little cards.

I don’t even know if my kid’s class is exchanging Valentine’s cards but you better believe I bought some as soon as they appeared on the shelves of my store. Because, lord knows, the last thing I need is for Walmart to run out of Power Rangers cards.

Monster Munch

Two days to Halloween! I hope you’re ready! I bought a second round of candy this weekend – this time I got the Tootsie Roll pack with Dots, that way I’m not tempted because Dots? Are disgusting. And I kind of feel bad for handing them out to the neighborhood kids but you know.

I’ve got two more Halloween recipes to get through before the big day. This one is a fun little snack mix that’s kind of like my favorite Christmas mix but this one has popcorn, pumpkin seeds and candy corn! Mmm! My kids went nuts over it, for obvious reasons.

I have been avoiding the popcorn trend because I thought for sure that covering popcorn with something would make it soggy but that wasn’t the case with this. The popcorn was the most fought over part!

Ingredients
  • 4 cups Chex cereal
  • 4 cups popped microwave popcorn
  • 1 cup honey-roasted peanuts
  • 1 cup pumpkin seeds
  • 1/4 cup butter
  • 6 tablespoons packed brown sugar
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon pumpkin pie spice
  • 1 cup harvest mix or candy corn
Instructions
  1. In a large microwavable bowl, mix cereal, popcorn, peanuts and pumpkin seeds; set aside.
  2. In a small saucepan, heat butter, brown sugar, and corn syrup on high over medium-low heat until mixture is boiling, stirring occasionally; stir in vanilla pumpkin pie spice. Pour over cereal mixture, stirring until evenly coated.
  3. Microwave 5 to 6 minutes, stirring and scraping bowl after every minute. Spread on waxed paper to cool, about 15 minutes, stirring occasionally to break up.
  4. Stir in harvest mix. Store in airtight container.

Butter Buddies

I am the worst blogger in the history of blogging. I’m aware of it.

I am just… ugh. So busy! I swear I spent all of last week going from store to store to store to post office sending my husband’s last package only to have him get online THAT night to tell me he needed one more thing. So store to store to store to post office again. Between that and our regular day to day stuff, things have been cah-razy around here. I swore that I was going to spend the weekend getting some posts together but I’m sure you guys could guess that I spent the weekend watching an America’s Next Top Model marathon and taking naps on the couch.

Today was the big due date for Secret Recipe Club so I had to at least get this done! (I switched SRC groups again in case you were wondering. I have commitment issues.) This month I was assigned to Smells Like Brownies which was super exciting because she has a ton of fun recipes on her blog.

I actually made these Trail Mix Cookies first but y’all, I don’t know if it’s me or my oven or what but the past few times I’ve made cookies they have just spread like crazy. Even after I refrigerate the dough for 24 hours! So yeah, they were delicious but just not photogenic. Luckily I had bookmarked her Butter Buddies as something I wanted to make for the upcoming holiays.

These are like muddy buddies but instead of chocolate, you use butterscotch chips. I have never been a huge fan of the regular muddy buddies but I knew I would love this. And I did! I only made half the recipe because I wasn’t sure if the kids would eat it and lord knows the last thing I need is to eat an entire box of powdered sugar-coated cereal. So anyway, the kids gobbled it up and then asked me to make it again the next day! It was definitely a hit and I’ll be making it again for Christmas!

Butter Buddies
from Smells Like Brownies
Ingredients
  • 9 cups Chex corn or rice
  • 1 cup butterscotch chips
  • 1/2 cup creamy peanut butter
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla
  • 1 1/2 cups powdered sugar
Instructions
  1. Pour cereal into a large bowl; set aside.
  2. Put butterscotch chips, peanut butter, and butter in a microwave-safe bowl. Microwave for 1 minute, then stir until smooth. If it's still really lumpy, microwave for another 30 seconds and stir again. Once the mixture is completely smooth, stir in the vanilla.
  3. Pour the butterscotch mixture over the Chex. Stir gently until all the Chex is coated.
  4. Put the powdered sugar in a very large zip top bag. Scoop the candy-coated Chex into the bag and zip it shut. Shake until all the cereal is coated in powdered sugar.
