The kids went back to school yesterday.

Hallelujah.

I did as every mom does after a solid 10 days with no break.

I got a spray tan and then drove an hour to the nearest Whole Foods for coconut flour tortilla chips and a bag of vegan peanut butter M&Ms.

Boyfriend was all, “You go to the coffee shop to work this morning?”

Umm.

Yeah, totally.

Anyway, I knocked out, like, 10 recipes last week while they were home and asking a billion questions every minute of the day so you better believe I have a yoga class scheduled this morning and then plan to spend at least 3 hours strolling around the library.

Might even sit in my car and watch Instagram stories without interruption for awhile before driving home.

Hot Cross Buns - my favorite Easter tradition! So delicious!

I think Easter’s my favorite holiday.

And yes, I realize that I say that for literally every holiday but I’m serious this time. I think Easter’s my fave.

I mean, Easter candy is most definitely the best candy. Plus you get to decorate with fun, bright colors and dye eggs. And you get to watch Hop as many times as you want and no one can judge you for it.

That’s what the kids and I do. We watch it over and over and over again. It’s our fave.

And finally, Easter food! I love the ham and the salads and, most important, the Hot Cross Buns!

I wasn’t.

Then this past weekend the Army post we live on had their Easter event and I mainly showed up because they promised an ice skating rink (and lied!) but after holding ALL THE CUTE BUNNIES at the petting zoo, I’m pretty excited to have the Easter Bunny visit us.

Plus, can we all agree that Easter has the best holiday candy? Cadbury eggs, Cadbury mini eggs, Cadbury white mini eggs…

More eggs, y’all!

I made a bunch of deviled egg recipes one day before my husband left (best day of his life) and this was his favorite. He loves everything spicy so of course I knew he would love it.

I did not, however, expect him to kill the whole batch within 30 minutes.

It’s a pretty basic deviled egg recipe but you add a bunch of minced pickled jalapenos and then top it with another jalapeno slice. If you’re looking for a way to spice up your eggs, this is perfect!

So who’s already dyed their eggs? We’re waiting until later this week, I think. Maybe sooner if I run out of ways to entertain the crazies. I had planned on doing the silk-dyed eggs but I never got around to searching for silk ties. Boo! Hopefully next year!

Southwestern Deviled Eggs

Ingredients
  • 1 dozen large eggs hard-boiled and peeled
  • 6 tablespoons mayonnaise
  • 2 to 4 tablespoons sliced pickled jalapeno peppers minced
  • 1 tablespoon mustard
  • ½ teaspoon cumin
  • â…› teaspoon salt
  • pickled jalapeno slices for garnish
Instructions
  1. Cut eggs in half lengthwise; remove yolks. Place yolks, mayonnaise, minced jalapeno peppers, mustard, cumin, and salt in a bowl; mash everything together. Spoon or pipe the mixture into the egg whites. Garnish with sliced jalapenos. Refrigerate until serving.
