The kids went back to school yesterday.

Hallelujah.

I did as every mom does after a solid 10 days with no break.

I got a spray tan and then drove an hour to the nearest Whole Foods for coconut flour tortilla chips and a bag of vegan peanut butter M&Ms.

Boyfriend was all, “You go to the coffee shop to work this morning?”

Umm.

Yeah, totally.

Anyway, I knocked out, like, 10 recipes last week while they were home and asking a billion questions every minute of the day so you better believe I have a yoga class scheduled this morning and then plan to spend at least 3 hours strolling around the library.

Might even sit in my car and watch Instagram stories without interruption for awhile before driving home.

Heeeey guys, happy Sunday!

How was the week? I told you guys all week that I’ve basically locked myself in my house for the last 7 days to just catch up on work. And also because it’s seriously been raining for a week now. It finally stopped this afternoon and it’s sunny and beautiful and I’m writing this is my bright blue lawn chair that I’ve set up in the driveway because that’s where the sun is brightest.

Sorry neighbors.

Switched up the pizza thing this week with some mini calzones. I actually made these twice this week because the first time it started monsooning as soon as I put them in the oven and the pictures were garbage.

Strangely, no one complained about calzones twice this week.

Weird how calzones twice a week is fine but kale salad twice is a no go.

Cuban Sandwich (plus a cookbook giveaway!)

Happy Wednesday! 

I’m pretty excited because I have a giveaway today! I’ve been trying to give away a cookbook every month – like, you know, a cookbook that came out that month. It was going to be my thing this year. But then the book I bought for March was kind of a dud. I still haven’t made anything from it.

And then I ordered the Whole 30 cookbook for April and just got distracted with the move and then being so sick. That one’s awesome though. Highly recommend it for anyone looking to eat healthier. 

Now I’m back on track and I have a really great book this month!

It’s Pure Pork Awesomeness by Kevin Gillespie and it really is all pork and all awesomeness. 

I pre-ordered this one months ago because I loooove Kevin Gillespie. He’s probably my favorite Top Chef contestant of all time – mostly because everything he does involves pork!

There are so many delicious looking recipes in this book. I made Tacos al Pastor for Taco Tuesday last week and they were so delicious. My kids don’t like tacos (clearly there was a mix up in the hospital – 3 times) but they wolfed those down. 

And then last night I made these Cuban Sandwiches. I’ve never actually had a Cuban Sandwich but between his cilantro mayo and the slow-cooked pork, I was sold. 

These were probably the best sandwiches I’ve ever had. Ever. In my entire life.

I already mentioned the mayo and the pork – there’s also two kinds of cheese, pickles, ham, and rich, delicious bread. 

I’m pretty sad that we have no leftovers.

Ham and Cheese Pretzel Bites

So how do we feel about the Superbowl?

Once the Broncos were out, I kind of stopped caring but there’s piece of me that’s sad the Colts aren’t going. I’ll be watching it, of course, but I just don’t really have a preference now. 

Next year, the Broncos will be there. Putting it out in the universe now. 

Okay, so it’s time to plan your Superbowl menu. You gotta have the wings, you gotta have some sweets, and you really need to make these Ham and Cheese Pretzel Bites. 

Guys, I cannot tell you how simple homemade pretzels are. I always go into it thinking “Gahhhh, this is going to take ALL DAY and they probably won’t even turn out well” and then I’m always pleasantly surprised when it takes 2 hours (that includes rising time) and they turn out awesome.

If you’re scared of working with yeast, try the pretzels. For whatever reason, I’ve had multiple yeast fails in the past month but these were a piece of cake.

These pretzel bites are stuffed with ham and cheddar… I mean.

So good. I love soft pretzels anyway but when you add ham and cheddar, I could eat my weight in them.  And they’re bite-sized which means you can eat more. That’s how it works, right?

Okay, first up, HAPPY THURSDAY! It’s almost Friiiiday!

Second, my blog will not exist from this coming Sunday night until the following Tuesday morning. So if you’re anticipating needing that Smoky Margarita recipe on Monday afternoon, get it now!

Do what I do, take a iPhone picture of the recipe ingredients and then try to figure out exactly what you’re supposed to do with them later.

It makes for a fun game. Sometimes it ends horribly but hey, you win some, you lose some.

I’ll remind you guys again tomorrow just in case.

And finally, macaroni salad!

I hate macaroni salad. My husband is obsessed with the grocery store deli kind that doesn’t taste like anything. Like, it doesn’t even taste like pasta. It’s just nothing.

Or at least I think so.

But I made this macaroni salad last summer for the first time and I think I’ve made it 10 times since then. It’s become our go-to side dish for anything grilled. It’s super flavorful and I love the big chunks of ham and cheese. Give it awhile to sit though or it will just taste like pasta coated in mayonnaise. Once it hangs out in the fridge for awhile though? The best macaroni salad ever! And the only one you’ll catch me eating.

Yield: 12 servings

Macaroni Salad

Macaroni Salad

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1 pound small pasta, macaroni, shells, rotini, etc.
  • 1 1/2 cup mayonnaise
  • 2 tablespoons mustard
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoons kosher salt
  • ground black pepper
  • 1 cup ham steak, cut into small cubes
  • 1 cup cheddar cheese, cut into small cubes
  • 2/3 cup frozen peas, thawed

Instructions

  1. Prepare macaroni to al dente according to package directions. After macaroni is cooked, drain and rinse in cold water. Once macaroni has cooled down, drain well.
  2. In a medium-sized mixing bowl, whisk together mayonnaise, mustard, sour cream, apple cider vinegar, sugar, salt, and pepper.
  3. In a large bowl toss macaroni with ham, cheese, and peas.
  4. Fold in mayonnaise mixture until pasta is well coated.
  5. Cover with plastic wrap and allow to sit overnight.
  6. If the salad seems a little dry after setting up overnight, add some milk a little bit at a time until salad becomes nice and creamy again.
