How was your weekend? I have a lot of stress in my life right now but I started a new book and had a killer arepa filled with shredded beef, plantains, black beans and a mountain of cheese and oh my god, I wish I hadn’t agreed to share with my kids.
I’d also promised a movie to any kid that could behave at school this week thinking no one would behave all week but I found myself watching The Emoji Movie on Friday afternoon.
Look. I know everyone says it’s terrible but no one ever told me it’s a love story! I thought it was super cute.

One of my all-time favorite comfort foods is stuffed pepper soup.
I don’t like peppers, I’m not a huge soup fan, but for whatever reason, I loved stuffed pepper soup.
It was one of the first recipes I learned to cook after I was married and I am almost embarrassed to admit that we ate it probably once a week for several years. It was definitely a favorite.
Recently I had a pretty nasty cold (kids went back to school = mom is sick within a month) and as soon as I started feeling yucky, I started craving that stuffed pepper soup. (With paleo cornbread!)
Paleo Stuffed Pepper Soup is so incredibly similar to the version I cooked in the early years of my marriage. The only real difference is the processed canned soup is gone and replaced with tomato sauce and the white rice is replaced with cauliflower rice.
I have been hesitant to jump on the cauliflower pizza crust train for a number of reasons.
Number one: Cauliflower? Pizza? No.
Number two: Most of the time, the crust of the pizza is more important than the toppings to me. Why would I want to give up my favorite part of the pizza?!
But my kids were begging for pizza Friday night and knowing that Mother’s Day was only days away and I consider eating lots of carbs essential on Mother’s Day, I needed to find a way to have pizza night with the kids without overdoing it.
So I tried the cauliflower crust.
Aaaaand… I loved it.
I’ve kind of heard mixed reviews. It seems like for every person that’s talking about how amazing it is, there’s someone saying that it’s mushy and you can’t slice it.
But I thought it worked perfectly.
Did it taste like pizza crust? No, of course not. And if someone tells you that it does, they are filthy liars.
It tastes like cauliflower but I feel like cauliflower kind of tastes like nothing so… it worked. I’m planning on making it again this weekend!
