Mango Coconut Popsicles - the best way to cool off! Fresh mango is blended with coconut milk and layered with coconut yogurt! Easy, fresh, and delicious!

Summer means a couple things for my kids.

One: they’re stuck going on all my weird adventures. If I need to drive an hour for something for a blog post, they’re all going with me and we’re stopping at a taco place, a beach, whatever happens to be in my Yelp bookmarks on the way.

They’re already over it.

And two: all their friends move. Every summer, man. Every summer all their friends move. #armylife

It’s rough. My oldest always has a great group of friends at the end of the school year and then they leave and he’s bored.

So last year when it happened I get him his first phone.  And this year I decided to upgrade the phone and his plan to make it easier for him to keep up with his friends.

And also to keep him entertained when I impulsively decide to drive across the state of Texas for perfect chips and queso.

Happy Friday! Ready for the weekend?!

This morning I’m headed out on a 10 hour roadtrip with 3 kids and 2 dogs. And I’m pretty excited about it.

I love a roadtrip. I always thought everyone loved roadtrips because my parents always seemed chipper at 5 am on Christmas morning when we’d get up to make the drive to New Orleans but I’ve learned in recent years that not everyone loves them.

My husband hates them which is really a shame because he’s so good at keeping me entertained on a roadtrip. I’m sure he’s grateful that he has to stay behind for work this time around.

As much as I love a roadtrip, a drink is always required at the end. Because stopping to pee every hour is only fun for the first… well, it’s really not fun at all.

I’ve made SO many sangrias this summer and I think this Tropical Sangria may be my favorite. It’s fresh squeezed orange juice and white wine with fresh pineapple, mango, and limes thrown in. And then right before you serve it, you add in some sparkling water. This is going to sound crazy but something happens to the mango once you add the sparking water – it’s almost like it becomes bubbly. It’s so yummy.

You have to make this before summer ends! I promise you won’t regret it!

We are officially two days away from one of the biggest grilling holidays. How excited are you? Hopefully as excited as I am.

We’ve already talked about how much I love the 4th of July but what I haven’t told you is that I’m approaching the holiday with a game plan. Because I have s’mores on my brain and I cannot even wait to roast a million marshmallows over the grill and then smush them in between graham crackers with all sorts of chocolate.

Happy Monday!

Tomorrow’s Cinco de Mayo! It totally snuck up on me. And I know what you’re thinking.

How did I let the drinking holiday sneak up on me? 

I am ashamed of myself.

The important thing was that I did remember. Yesterday at the grocery store as I was walking past all the fruit nectars at the grocery store. 

Also, I was at H-E-B before the samples were out and shopping without tiny cups of wine was not much fun. 

Next week, we go after noon!

Anyway, my husband took the boys to see the new Avengers movie yesterday afternoon and left me alone to make and consume ALL THE MARGARITAS. 

I saw a mango margarita recipe recently that called for the mango nectar (in cans – usually in the Mexican food aisle) instead of fresh mango which is genius because A) mango is annoying to cut and B) if I buy the already cut mango, I’m eating it before it makes it into a margarita. 

So this version calls for that nectar, fresh lime juice, tequila, you know, the usual suspects. They were really, really, really good and went perfect with a Sunday afternoon Married at First Sight marathon. #obsessed

I’m sure I’ve shared this with you before but I have this weird, irrational fear of cow’s milk. It’s right below my #1 irrational fear of accidentally saying “I love you” on the phone to someone I hardly know. But anyway, I’m strictly an almond milk girl and so far this summer my favorite thing to make are smoothies with almond milk.

I was in Safeway the other day picking my usual Silk Almond Coconut Blend (I use it in my coffee every day and in smoothies and such) and noticed that Silk also has Almond Milk Protein + Fiber which I’d never tried.

You guys know that I’ve been trying to act like I know something about nutrition and fitness so I am all about anything with more protein and fiber! The Silk Almond with Protein + Fiber has 5 grams of protein and 5 grams of fiber which is pretty impressive for almond milk!

For this post, though, we’re talking smoothies! I used the Almond Coconut Blend in Unsweetened Vanilla and since the coconut already makes it feel sort of tropical, I went with a tropical theme. Y’all know I’ve been buying $7.99/pound sliced mango (I know, it’s ridiculous – you don’t have to tell me) like it’s going out of style so I had to use some of that plus fresh pineapple and orange! And some coconut water because I can’t get enough coconut! Plus, coconut water is super hydrating and since it’s SO HOT lately, a little extra hydration is always a good thing!

These are really delicious. I usually find smoothies too heavy to be refreshing but this one really worked for me. And my kids all loved it! So definitely a winner!

Hydrating Tropical Smoothie (Smoothies with Almond Milk)
Ingredients
  • 1 cup Silk Almond Coconut Blend in Unsweetened Vanilla
  • 1/2 cup - 1 cup coconut water
  • 1/2 cup pineapple cut into cubes
  • 1/2 cup mango cut into cubes
  • 1 orange peeled and segmented
  • 1 cup ice
Instructions
  1. Put all ingredients into a blender and blend until you reach the desired consistency. Add more liquid or more ice as necessary.
