Hey guys! How as the long weekend? I hope it was long and fabulous!  And I hope you’re as excited as I am for a short week!

First up: I have to admit that I’ve had 5 Pumpkin Spice Lattes since Friday.

Five.

It’s a problem.

I’m keeping a tally on the whiteboard in my office so I’ll be sure to keep you updated.

Second: I am having the worst pumpkin baking luck.

I’ve made 3 different things and all 3 failed. Well, to be fair, the first was only a fail because I tried to photograph it in July and it’s so flippin’ hot here that the whipped cream melted literally seconds after I put it on the plate.

So I just ate it all instead of blogging about it.

The other two were total fails.

My first successful pumpkin goodie this year is this Pumpkin Peanut Butter Dog Treats recipe.

Hey, the pups are just as excited as I am about pumpkin season!

I was almost tempted to give these a try because they smelled so good when baking. I mean, pumpkin, peanut butter, cinnamon! What’s not to love? My dogs loved them and I’m sure yours will too!

Peanut Butter Bacon S'mores - made with Reeses peanut butter cups and crispy bacon!

Last day of S’mores Week!

It has to include bacon. Because duh. Why wouldn’t I combine my two favorite foods ever?

I’m having this weird thing with flavored bacon right now. I’ve always been kind of a purist when it comes to bacon. I would only buy the plain, center cut bacon. But then I discovered honey bourbon bacon and my life hasn’t been the same since.

If you can find it (I’ve only seen it at Walmart but I live in Tiny City, TX so it may be in other stores – it’s by Wright Brand), I highly suggest using it for these s’mores. I mean, honey. And bourbon. Bacon. On s’mores.

If you can’t find it, maple bacon works too! Or just use regular bacon! Bacon is bacon and bacon is good.

Okay, so under the bacon is a Reeses peanut butter cup. S’mores made with peanut butter cups are THE BEST.

You should totally make these. Make them on your stove after your kids are in bed so you don’t have to share. I won’t judge you.

Nicole made Chocolately S’mores Ice Cream and it looks amazing! I would love a big bowl!

Peanut Butter Party Popcorn - a sweet and salty snack!

Happy Monday! I am SO ready for a fresh week. Although I’m simultaneously hating how fast summer is going. I am most definitely not ready to be getting up early for school again.

So, good news! Sofia (#schnoxie) got her cast off last Thursday! Two weeks early! Because the cast was causing these nasty sores on her leg and she kind of smelled like garbage that had been sitting in the sun for 7 weeks. She’s technically on “kennel rest” which translates to “my bed rest” because I’m that kind of person.

And the bad news. My Macbook completely died on me the same day. After a year and a half. How do you people keep macs forever?! Mine’s been dying since day 3 when it had to have it’s keyboard rebuilt. RIP Macbook.

It sadly took most of my photos from November 2013 – present with it. I took it in to Geek Squad, forked over a ridiculous amount of money for them to recover 15k photos and then got the dreaded call that the harddrive was unreadable.

Yep.

I’d been working on uploading all my photos to the cloud storage I use but that dang computer was just so slow. Gahhhhh.

Anyway, I lost my next 5 blog post photos so I’m starting from scratch. Kind of. This is one of the posts I lost buuuuuut I was happy to remake it!

I don’t love popcorn. It’s just not my thing. Unless it’s covered in something! I can eat BOXES of that caramel popcorn with nuts. And I looooove those Christmas tins of popcorn – but only the cheese and caramel sections.

So of course I love this Peanut Butter Party Popcorn since it’s coated in a mixture of white chocolate chips and peanut butter chips with vanilla instant pudding mixed in. And then it’s all covered in sprinkles because everything is better with sprinkles!

January is a hard month to be a food blogger. I mean, the last few months have all had a theme. September was football, October was pumpkin & Halloween, November was Thanksgiving, and December was Christmas.

But there’s nothing in January.

I’m posting healthy/paleo stuff because I hear it’s popular around this time of year but every time I do, someone unsubscribes and uses the “content not relevant” option.

Which then causes a conversation with my husband that goes something like this: “WHAT DOES THAT MEAN?! Are they saying that my content is not relevant to THEIR life? Or are they saying I’m not relevant? Am I old? Am I too old for the internet?!”

And my husband just looks at me. Because how do you even respond to that?

Welp guys, sorry I haven’t been posting Christmas cookies and treats like I’m supposed to be doing.

I’m the worst.

I wish I could be one of those bloggers who had hundreds of posts lined up and ready to be published. Nope, I have exactly none. I pretend it’s because I like to live in the moment and blog about what my heart wants me to. But let’s be real, I’m just a horrible procrastinator. Like I said, I am the worst.

So yeah, my husband came home a couple weeks ago. On Thanksgiving, actually. It’s quite a different experience this time around. Last time he returned from Afghanistan  – because of how the war was going and probably because it was his first deployment – things were just bad. Just really, really bad. 

This time, it’s been really easy. It kind of just seems like he’s been gone for a week instead of 9 months. Whereas last time, it took us about 7 months to get to a good place. It’s crazy different and I’m very grateful for it. 

But I’m finally here with a Christmas treat! I’ve been meaning to make Saltine Toffee for years and years but I always run out of time and energy – finally managed to get it done this year! And I added peanut butter because why not? And peanut butter M&Ms because… duh.

It’s delicious. And I hate Saltines with a fiery passion. But the sugar mixture and then the peanut butter and then the chocolate… it’s just sweet and salty and I love it. 

I do have more Christmas-y recipes coming. Hopefully.I’ve had several cookie fails lately so we’ll see. I’ve got a drink coming for sure. Don’t even worry about that.
