I never really had an opinion on pineapple until Nicole and I got matching pineapple tattoos while we were in Salt Lake City almost 3 years ago.

We’ve both been kind of obsessed with all things pineapple since then. We send each other pictures of anything pineapple we see in stores, anything pineapple we see on menus, anything and everything pineapple.

I got the idea of pineapple cheesecake bars stuck in my head weeks ago and bought all the ingredients and have been seriously procrastating.

I finally got them made this week and omg you guys, I’m so thrilled with the results and I can’t wait for you to make them.

Heeeey guys, happy Sunday!

How was the week? I told you guys all week that I’ve basically locked myself in my house for the last 7 days to just catch up on work. And also because it’s seriously been raining for a week now. It finally stopped this afternoon and it’s sunny and beautiful and I’m writing this is my bright blue lawn chair that I’ve set up in the driveway because that’s where the sun is brightest.

Sorry neighbors.

Switched up the pizza thing this week with some mini calzones. I actually made these twice this week because the first time it started monsooning as soon as I put them in the oven and the pictures were garbage.

Strangely, no one complained about calzones twice this week.

Weird how calzones twice a week is fine but kale salad twice is a no go.

Today I’m heading up to Salt Lake City (OMGMOUNTAINS! I might just stay forever!) for a conference so I have to stick with my tradition of posting a cocktail on days when I fly.

I actually really enjoy flying but I’m also that person that has a minor panic attack with every bump. Which is why we talk cocktails on days that I fly. Because I’ll probably spend most of the flight wishing I had one.

The conference is going to be so much fun though. I’m rooming with my bestie Nicole and we coordinated our flights so that we land at the same time and can navigate SLC together. And there is going to be SO MUCH FOOD. I plan on gaining at least 10 pounds.
