Mini Hawaiian Calzones - easy homemade calzones filled with ham, pineapple, red onion, and mozzarella cheese! The perfect way to switch up pizza night!

Heeeey guys, happy Sunday!

How was the week? I told you guys all week that I’ve basically locked myself in my house for the last 7 days to just catch up on work. And also because it’s seriously been raining for a week now. It finally stopped this afternoon and it’s sunny and beautiful and I’m writing this is my bright blue lawn chair that I’ve set up in the driveway because that’s where the sun is brightest.

Sorry neighbors.

Switched up the pizza thing this week with some mini calzones. I actually made these twice this week because the first time it started monsooning as soon as I put them in the oven and the pictures were garbage.

Strangely, no one complained about calzones twice this week.

Weird how calzones twice a week is fine but kale salad twice is a no go.

Barbecue Chicken Pizza – a delicious and easy recipe for pizza night! Barbecue sauce, chicken, bacon, pineapple, and red onion layered with colby jack cheese!

Hi, hello, I sliced a portion of my finger off making this pizza yesterday.

I came very close to quitting cooking forever because that was beyond traumatizing. I’ve never cut myself while cooking. Sure, I’ve accidentally grated my thumb on the cheese grater because haven’t we all? But to just slice off some of your finger?

No.

No.

No.

If you never see bacon on this blog again, remember this post.

Pineapple Rosemary Crush - easy cocktail recipe with pineapple, rosemary, and sparkling wine! It looks fancy but it's inexpensive and serves a crowd!

Today I’m heading up to Salt Lake City (OMGMOUNTAINS! I might just stay forever!) for a conference so I have to stick with my tradition of posting a cocktail on days when I fly.

I actually really enjoy flying but I’m also that person that has a minor panic attack with every bump. Which is why we talk cocktails on days that I fly. Because I’ll probably spend most of the flight wishing I had one.

The conference is going to be so much fun though. I’m rooming with my bestie Nicole and we coordinated our flights so that we land at the same time and can navigate SLC together. And there is going to be SO MUCH FOOD. I plan on gaining at least 10 pounds.

Seriously excited to get there. Follow me on instagram and snapchat (amandalivesay) to keep up!

Pineapple Rosemary Crush - easy cocktail recipe with pineapple, rosemary, and sparkling wine! It looks fancy but it's inexpensive and serves a crowd!

This is the easiest fancy-ish cocktail you’ll ever make.

The rosemary makes it fancy, right?

I think so. Rosemary makes everything look fancy.

It’s just pineapple, rosemary, a bottle of sparkling wine, and some ginger ale. That’s it! It’s so pretty and so tasty and perfectly refreshing for hot summer days.

Ambrosia Macaroons - delicious coconut cookies filled with orange zest, lime juice, and dried pineapple. And topped with a cherry!

COOKIES!

I’m so into making cookies right now.

I have 3 different cookies on my counter right now.

I’m refusing to try any of them because I know if I have one, I’ll have to have them all.

No self control.

None. Zero.

But these! I made these weeks ago and ate way more than I’m going to admit to you today. I cannot resist a coconut macaroon!

It is really Monday again?

Ugggghhhh.

I hope you had a relaxing and/or exciting weekend and hopefully Monday won’t be too bad to you.

But just in case, I made us some Pineapple Blackberry Mojitos.

Pineapple Blackberry Mojitos - the BEST summer cocktail recipe! Pineapple, blackberries, and mint are crushed and then mixed with rum, lime juice, and sparkling water!

Pineapple Blackberry Mojitos!

These are really, really easy to make.

You just use the handle of a wooden spoon (or whatever you have) to mash a bunch of blackberries, pineapple, and mint together and then dump in some rum, lime juice, and sparkling water. Throw some ice in and top it with a bunch of mint so it looks fancy. Done.

They are delicous and refreshing and just so pretty to look at! You could totally double or triple the recipe to make a pitcher for a party, too.

It’s going to become your official summer drink!
