Hi guys, happy Monday!

I hope anyone in the path of Irma is doing okay today.

I spent my weekend watching the CNN coverage and screaming “GET CHRIS CUOMO OUT OF THE STREET!” at the TV because he was just standing there getting battered by rain and wind and he is too hot to be doing such a thing.

Not much else going on around here this weekend. It’s too cold to go to the lake but still a bit too hot for hiking after, like, 9 am.

So yeah, hurricane coverage, football, and chicken wings were my entire weekend.

I’m loving summer. This has been the best summer of my life and we’re only a few weeks in. My kids are all at really good ages for outdoorsy things right now and we’re just really loving everything central Texas has to offer.

I am highly caffeinated and ready to take on Tuesday.

Today’s a good day. September 1st means so many great things! I mean, the Dairy Queen Pumpkin Blizzard is back. The Pumpkin Spice Latte is right around the corner. Bath & Body Works is releasing even more pumpkin candles next week. I am SO EXCITED for September.

The only way September could be better is if we were back in Colorado. *grumble grumble*

September also means football. I’m stupid excited for football. You already know this.

And with football comes yummy, snacky food.

My Ranch Goldfish Snack Mix has become a favorite among our friends so I’ve been looking for other snack mixes that don’t involve the fish. This one is so yummy. It’s got the Chex, pretzels, and cheese crackers and then it’s all coated in a buttery parmesan and ranch sauce and baked until extra crispy and delicious.

I’m obsessed.

Cheesy Ranch Chex Mix

Cheesy Ranch Chex Mix
Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 8 cups Chex cereal, rice, wheat, or corn
  • 2 cups mini pretzels
  • 2 cups Cheez-It crackers
  • 3 tablespoons butter
  • 1 1 ounce package ranch seasoning mix
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 250F. Line a large rimmed baking sheet with parchment paper.
  2. Combine cereal, pretzels, and crackers in a very large mixing bowl.
  3. In small microwavable bowl, microwave butter uncovered on High about 30 seconds or until melted. Pour over cereal mixture; stir until evenly coated. Stir in dressing mix and cheese until evenly coated.
  4. Bake for 1 hour, stirring every 15 minutes.
  5. Cool completely before serving.

So how do we feel about the Superbowl?

Once the Broncos were out, I kind of stopped caring but there’s piece of me that’s sad the Colts aren’t going. I’ll be watching it, of course, but I just don’t really have a preference now. 

Next year, the Broncos will be there. Putting it out in the universe now. 

Okay, so it’s time to plan your Superbowl menu. You gotta have the wings, you gotta have some sweets, and you really need to make these Ham and Cheese Pretzel Bites. 

Guys, I cannot tell you how simple homemade pretzels are. I always go into it thinking “Gahhhh, this is going to take ALL DAY and they probably won’t even turn out well” and then I’m always pleasantly surprised when it takes 2 hours (that includes rising time) and they turn out awesome.

If you’re scared of working with yeast, try the pretzels. For whatever reason, I’ve had multiple yeast fails in the past month but these were a piece of cake.

These pretzel bites are stuffed with ham and cheddar… I mean.

So good. I love soft pretzels anyway but when you add ham and cheddar, I could eat my weight in them.  And they’re bite-sized which means you can eat more. That’s how it works, right?
