Charred Corn and Bacon Guacamole
Ingredients

ripe avocados
4
slices
bacon
cooked and crumbled
2
ears fresh corn
grilled until charred in places
⅓
cup
red onion
finely diced
1
jalapeno
minced
juice of half a lime
2
tablespoons
cilantro
minced
salt and pepper
Instructions
In a large mixing bowl, mash avocados to desired consistency. Gently fold in bacon, corn, onion, jalapeno, lime juice, cilantro, and salt and pepper. Cover tightly and refrigerate if not serving immediately.
