Charred Corn and Bacon Guacamole


  • 3 ripe avocados
  • 4 slices bacon cooked and crumbled
  • 2 ears fresh corn grilled until charred in places
  • 1/3 cup red onion finely diced
  • 1 jalapeno minced
  • juice of half a lime
  • 2 tablespoons cilantro minced
  • salt and pepper


  1. In a large mixing bowl, mash avocados to desired consistency. Gently fold in bacon, corn, onion, jalapeno, lime juice, cilantro, and salt and pepper. Cover tightly and refrigerate if not serving immediately.
