Easy Pork Gyros

Servings 4 servings

Ingredients

  • 1 tablespoon olive oil
  • 1 Smithfield Roasted Garlic & Herb Loin Filet cut into bite-size cubes

For the tzatziki sauce:

  • 1 cup plain Greek yogurt
  • 1 cup English cucumber finely diced
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove minced
  • ¼ cup fresh mint finely chopped
  • salt to taste

For serving:

  • 4 pocketless pita breads
  • lettuce
  • sliced grape tomatoes
  • thinly sliced red onion

Instructions

  1. Heat the olive oil over medium-high heat in a large skillet. Add cubed pork and cook until browned, about 5 minutes. Flip each piece and cook until browned on the other side and cooked through.
  2. While the pork is cooking, stir together Greek yogurt, cucumber, lemon juice, garlic, and fresh mint. Season to taste with salt. Refrigerate until ready to serve.
  3. If the pita bread you are using breaks when rolling, microwave fora bout 20 seconds with a damp paper towel on top.
  4. When ready to assemble, place desired amount of lettuce on each pita. Top with the cooked pork, tomatoes, and sliced red onion, Drizzle tzatziki sauce on top.
