Pork Chops with Cider Bacon Glaze

Ingredients

  • 2 sliced bacon diced
  • 1 pound Smithfield All Natural Bone In Pork Chops
  • salt and pepper
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • ¾ cup apple cider
  • ½ cup chicken broth

Instructions

  1. In a large skillet, cook diced bacon over medium-high until crisp. Remove with a slotted spoon to a paper towel-lined plate.
  2. Season the Smithfield All Natural Bone In Pork Chops with salt and pepper. Put them into the same pan, in the bacon fat and cook for about 6 minutes. Flip and cook another 5 minutes, or until the pork reaches 145F. Remove to a plate.
  3. Lower the heat to medium and add onion to the same pan. Cook, stirring frequently, until the onion is soft and translucent. Add garlic and cook until fragrant, about 30 seconds. Whisk in apple cider and chicken broth, scraping the bottom to get all the bits. Add pork chops to the mixture and bring to a boil. Cover, lower to a simmer, and cook until the glaze has thickened, 3 - 4 minutes.
  4. To serve, sprinkle the bacon over the pork chops and pour extra glaze on top.
