Pumpkin Spice Granola (+ PAM Cooking Spray hacks!)

Ingredients

  • 2 ½ cups rolled oats
  • 2 tablespoons coconut oil melted
  • 2 tablespoons pumpkin puree
  • ¼ cup honey
  • 1 teaspoon pumpkin pie spice
  • pinch salt
  • ½ cup chopped pecans

Instructions

  1. Preheat oven to 350F. Spray a rimmed baking sheet with PAM Cooking Spray.
  2. Put oats in a large mixing bowl.
  3. In a separate bowl, combine coconut oil, pumpkin puree, honey, pumpkin pie spice, and salt. Pour over the oats and stir to coat all the oats.
  4. Transfer the mixture to the prepared baking sheet and bake for 30 minutes, stirring after 15 minutes. Stir in pecans and bake for another 15 minutes.
  5. Cool completely before serving.
