Twice Baked Red Potatoes

Ingredients

  • PAM Cooking Spray
  • 2 pounds medium-sized red potatoes
  • 2 ounces cream cheese softened
  • ½ cup sour cream
  • 1 cup sharp cheddar cheese
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 slices bacon cooked and crumbled

Instructions

  1. Preheat oven to 400F. Spray a rimmed baking sheet with PAM Cooking Spray.
  2. Place potatoes on baking sheet and bake 40 - 50 minutes or until a knife can easily go through the potatoes. Cool almost completely.
  3. Once the potatoes are cool, beat cream cheese and sour cream together with an electric mixer until smooth. Beat in cheddar cheese, garlic powder, salt, and pepper. Stir in bacon.
  4. Scoop out the inside of the potatoes, leaving a enough to hold the potato skin upright. Add the scooped out potato to the cream cheese mixture and beat to combine. Stir in bacon.
  5. Spoon the mixture into the potato shells. Bake about 10 minutes or until the cheese is melted.
