Oatmeal Raisin Cookies

Ingredients

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup 1 ½ sticks butter
  • 1 cup packed brown sugar
  • ½ cup white sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon vanilla
  • 1 egg
  • 1 egg yolk
  • 1 ½ cups old-fashioned oats
  • 1 cup raisins

Instructions

  1. Preheat oven to 325F. Line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together flour, baking soda, and salt until no lumps remain.
  3. In a separate bowl, beat together butter, brown sugar, and white sugar until light and fluffy. Beat in cinnamon, vanilla, egg, and egg yolk. Add the flour mixture and beat until just blended. Add in the oats and raisins and lightly beat just to mix them in.
  4. Roll into ¼ cup balls and place on prepared baking sheet. Bake for 12 - 15 minutes or until the edges are lightly browned. Cool completely on a wire rack.
